Pork Chops with Raspberry Sauce

Reviewed: Nov. 24, 2005
This is a great dish, made it last night exactly as written. The sauce is so good I can imagine using it in many other dishes. It was even good when it ran into the macaroni and cheese we had with it. Next time Im going to put the chops back in the sauce and cook for a few minutes to get them totally covered with sauce before serving, thanks for the recipe

Slow Cooker Mashed Potatoes

Reviewed: Dec. 2, 2005
Great mashed potato's and a nice treat not to be scrambling last minute trying to have them ready when meat is done. I used clean thin skinned white potato's with skins on and added chopped green onion. Made a full small crockpot, 2 meals for 4.

Roast Beef with Coffee

Reviewed: Dec. 2, 2005
Very simple and very good. Coffee, broth made a fantastic gravy. Only changes I made were to rub meat with celery salt and add some chopped red onion on top of roast. Basted several times during cooking. Mine came out a bit dry but that was my fault due to a faulty meat thermometer. I will make this again.

Maple Salmon

I tripled this recipe for 3.5 of salmon. Used exact ingredients and cook time. Marinated in a large ziplock bag for 2 hours. Very simple and excellent taste. everyone loved it and most said it was the best salmon they ever had. I think this sauce would make cardboard taste great. You cant go wrong.

Hamburger Potato Casserole

Very good and pretty quick. Added a little garlic to the burger while cooking, a can of corn with other ingredients, doubled the cheese, added the other half in the middle somewhere. Will make this again for sure.

Carol's Arroz Con Pollo

Reviewed: Jan. 22, 2007
Made a few changes, used brown rice, had to double the amount of rice as this rice didnt swell and absorb liquid as well as white rice. Had to cook 40 min. to allow time for moisture to absorb. I doubled the saffron, used olive oil instead of vegtable. Pan was too shallow to ad the meat so I mixed it all in a baking dish for 15 min. at 350 and served. When rice didnt absorbe I had my doubts but this turned out great. Nice flavor, everyone asked me to make it again. I will be buying an oversized deep frying pan so I can leave chicken in while cooking.

Texas Pork Ribs

Reviewed: Feb. 6, 2007
Excellent rub, use to just use BBQ sauce on my ribs, never again. I followed rub directions exactly and didnt find it too hot at all. Everyone here except myself do not like food very spicy and they all liked these ribs. I have made them twice and havent yet let them sit the full 8 hours in the fridge, bet they will be a 6 if I do, thanks for the recipe.

Sweet and Sour Kielbasa

Reviewed: May 22, 2007
I added 2 pounds of sausage instead of the one pound called for as there was more then enough sauce to cover. Very tangy and very good. Sauce is great over mashed potatos.

Chicken Makhani (Indian Butter Chicken)

Reviewed: May 30, 2007
A good recipe but time consuming. I live in an area with many Indian restaurant, one which has the best Butter chicken Ive had. This recipe isnt as good as that but has a nice taste. I added one small can of tomato paste to thicken as it was quite thin to start.

Baked Beans from Scratch

Reviewed: Mar. 15, 2011
Made exactly as written, beans were a little dry & lacked flavor. Hoped they would have been sticky with lots of texture and stick to the spoon like Mom use to make, these were not what I was looking for.
