Chinese Napa Cabbage Salad

+This is a great salad and always very popular at potlucks. I do not use the ramen seasoning packet (bunch of chemicals!) and I add a little lemon juice to the dressing.

Bread and Celery Stuffing

I made some adjustments so only started with 4 stars but it ends up great. I used whole wheat bread dried for a day. I added a little bit of chopped carrots and bell pepper to the celery mix. After cooking I added 2 beaten eggs and some sunflower seeds. I used 2 Tbspn of spices. For chicken broth I used a boullion cube and 8 oz water. Add slowly, stir and use it all. I baked for 30 min. in a pan covered with foil.

No Bake Chocolate Oat Bars

Very delicious and easy to make. I did decrease the butter to 1.5 sticks and used the 1/4 cup milk and had it on low heat about 5 minutes. I also used a 9x12 pan but I do not recommend this, the oat layer is just too thin. Next time I'll up the oats to 3.5 cups but if you don't want to play with the recipe then just stick with the 9x9 pan.

Jam Filled Butter Cookies

Very good, few ingredients and easy to make. I even made my own lemon curd to use in half the recipe. I use half whole wheat flour and half white spelt so they aren't too brown. Rolled the balls in granulated sugar and flattened them a little. Spread the jam flat, it doesn't flatten itself in baking.

Perfect Lemon Curd

I have made this several times now. I omit the zest and use 1/2 stick butter=1/4 cup. To avoid any cooked egg bits I cream the butter and sugar then add eggs one at a time mixing well after each. Then add lemon juice then heat. Takes about 15-20 minutes to thicken, stir constantly.

Peruvian Cilantro Rice

Good dish. I don't have a blender or processor so I just used cilantro leaves and that was fine. Also didn't have cumin so I used 1 Tbsp of cajun spice, my husband's favorite, so no problem with blandness. Rice seemed to having problems cooking so next time I'll cook it in a deep pot instead of large saucepan.

Lemon Square Bars

My daughter and husband, neither lemon fans, really enjoyed these. I used a little less sugar and only juiced two lemons. They did get too brown, I would keep a cookie sheet on the top rack the whole time next time.

Seven Layer Tortilla Pie

This is a delicious entree. First time I added grilled chicken to the black bean layer (I substituted kidney beans) and the second time I used ground beef. I also made my own refried beans-bit of a chore but worth it. Very good second day too.

Black Pepper Beef and Cabbage Stir Fry

Had a little too much cabbage in it the first time I made it, so the second time I bought an even smaller head, otherwise use 1/3 head. I also added onion, carrots, mushrooms to the stirfry.
