Slow Cooker Chicken Taco Soup

I first made this for a Halloween party and I've made it over and over since! Ive been asked for the recipe several times. I love this recipe because it is so easy and it can be easily made gluten free. I use 2 pounds of chicken breast instead of 3 breasts because that can vary quite a bit with the giant chickens now. Use GF beer and McCormick's Taco seasoning because it is GF. The hardest part of this recipe is shredding the chicken. This is where patience comes in because if you cook it all day on low, it is much easier to shred than if you try for high for 5 hours or so. I have made this once without beer because my dad didn't have any GF beer and while good, I think the beer gives it a richness in the broth that is otherwise missing.

Tomato Basil Couscous Salad

This was easy to make ahead and serve outside despite 100 degree temps. Make sure to get Israeli or Pearled couscous. I made this the day before and used less vinegar than called for based on other reviews. I also recommend adding the basil right before serving. My basil ended up pretty ugly after 24 hours. I also added some seeded cucumbers to help with make is more refreshing.

Baked Cheese Olives

Everyone raved about these. I used large olives stuffed with almonds. I initially had trouble with the dough so added about a tablespoon of olive oil and about 1/4 to 1/2 cup water while the mixer was going till I got a dough consistency. I used the flat beater. Once the dough was formed, I chilled it for over an hour. Then I wrapped the air dried olives and placed them on a cookie sheet in the fridge overnight. I popped them in the oven for 15 min at 400. They were perfect. Great recipe.
