One Pot Tuna Casserole
Made this last night and it was great!! I love to cook - but sometimes no time to get fancy. This was filling and very tasty. I altered things slightly: 16oz egg noddle, 1 can mushrm soup, 2 cans of tuna, 1 cup sour cream (to replace the milk), 1-1/2 cups fresh shredded cheddar, can baby peas, tsp garlic powder and dash of worchester. The best was the finale!! Covered top with crunched up Cheez-Its crackers and baked about 10-15 minutes. Small green salad on the side!! GREAT weekday supper! Yum

Mango Salsa
I'm making this recipe for the third time tonight - for a work party. This is such a nice change-up from the same old same old red salsa with chips. Teamed up with BBQ chicen it is the best!! Be sure to buy plenty of mango - that pip is so huge!!

Roasted Potato Medley
I was searching for a new potato side dish - THIS IS IT!! I used equal parts red, yukon and sweet potato - terrific! The seasonings make it special - do NOT leave out the sweet potatoes! A man at my dinner party (who doesn't cook much) asked for the recipe! A definite keeper!!!
