After living with the next Rachel Ray for the past two years, I've started to get into this whole cooking thing...I even bought a cute apron, which makes me feel like this domestic goddess, although I am far from that! I've been living on my own for about a year and a half. I live in the city...which makes for short and frequent trips to the grocery! I'm learning to cook better each day - improvising as much as I can. I just want to be able to cook for my family someday - all in appropriate timing - and throw fabulous dinner parties!
My favorite things to cook
I am a health nut, so I cook relatively low-fat. I like cooking & grilling poultry and seafood and always have to accompany them with a fresh vegetable side. (I am anti-canned veggies.) I've been making some big, yummy salads lately - tossing in whatever I have on hand and using just olive oil and balsalmic to dress...it really brings out the real flavors in the salad! I also enjoy cooking anything from Giada DeLorentes.
My favorite family cooking traditions
My mom makes the best Spagetti sauce and I used to have with a heaping bowl of pasta the night before a race...I have been a runner for quite some time. Nowadays, I'll make it even before a 5K...it makes me run fast!
Christmas Cookie Exchange with my girlfriends each year is lots of fun.
I come from a large family, so getting everyone together at the dinner table was a rare occurrance. As I begin my own habits and eventually start my own family, I want dinnertime to be the best part of the day. A time for everyone to bring their wagons together and saddle up, sharing their day and enjoying each other's company. I want my dinner table to be a loving, open & rejuvenating place to share and grow in our relationships with one another...even it now it is only with my two roomates!
My cooking triumphs
I made dinner for my entire family this Christmas Eve...again, getting everyone together - all 10 of us - was a challenge, but was well worth it!
Last night I just make an impromptu turkey burger with ground turkey, quick oats, spinach, diced tomatoes & onions, a bit of chili pepper, salt & pepper and threw it in the grilling pan... fresh, fast and flavorful!
