Cheesy Fried Potatoes

I didn't have any whole potatoes, but I did have a bag of shredded hash brown potatoes. I used 4 pieces of bacon and at first drained half the greece. I hate to admit it, but I ended up adding the rest of the grease in. I think the shredded potatoes were more in quantity than the recipe called for, so I didn't have problems with them being too greasy. I also used a whole small onion. Taking the idea from another reviewer, I used a Taco mix of cheese. Overall it was fabulous! I will definitely make this again.

Apple-Stuffed Squash

Gingerbread Biscotti

These were easy, delicious, and they made a ton. What more could you ask for? I made three kinds of biscotti for Christmas gifts at work this year, and this was by far the favorite. As with others, I found the cooking time just slightly high, causing dark bottoms and ends. Dipping them in the white chocolate made me forget all about the dark ends though and added quite a bit of appeal. I found that adding a tablespoon of shortening to the chips helped make the consistency easier for smooth dipping.

Homemade Cereal

This has been one of my favorite recipes from this site! I make this all the time for my family and as gifts for friends. Everyone I've given it to has beeged for the recipe. My boys put it on yogurt or applesauce, and I just love it in a bowl with milk for breakfast. When making it I include the optional cinnamon and nutmeg, but I also include ½ - 1 cup of flax seeds. I sometimes splurge on the vanilla too and add up to 2 tablespoons. As for the nuts I have found that I like chopped hazelnuts and almonds. I cook the nuts throughout the entire baking cycle to give them a nice toasted taste. Then I just add the dates for the last 15 minutes and skip the coconut. Super easy! Super good!

Tortilla Rollups IV

I made a double batch of these to take to work but wasn't happy with the way they were turning out. I didn't want to waste the filling though, so I plopped it down on a bed of lettuce and topped with salsa and shredded cheese. The impromptu taco dip turned out to be the hit of the party!

Chocolate Chip Cheese Ball

What an unexpected hit! I followed the advice of others and used 1 cup powdered sugar, 3T brown sugar, and 1/2t vanilla. I tried using the suggestion of 1 cup chocolate chips but found it to be too many, so the next time I went back to the original ¾ cups. It was perfect! I tried serving it with vanilla wafers and both regular and chocolate graham sticks. The favorite by far were the chocolate graham sticks. This was easy to make ahead and fun to swerve. Thanks for the recipe!

Brown Family's Favorite Pumpkin Pie

Thank you! What a nice twist on an old favorite. The only change I made was to serve it on the gingersnap crust from Shelley’s recipe for Pumpkin Cheesecake in a Gingersnap Crust also on this site. Truly delicious and a beautiful presentation.

Pumpkin Apple Streusel Muffins

Thank you for the recipe and all the useful advice from the reviewers. I did not have any pumpkin pie spice so I used the substitution provided by “boringmama.” I also decided to make it in a bunt pan and used to cooking suggestions of “chefjeff.” I put the streusel topping in the middle and drizzled a vanilla glaze on the top after baking. Of course, I also added some diced walnuts to the streusel topping, because I love nuts in just about anything. It was beautiful and yummy. Perfect for a weekend family treat.

Roast Sticky Chicken-Rotisserie Style

Okay- the chicken was really good too but I love the soup you can make from the leftovers of this recipe! It has so much flavor! Yummmmm. The only change I made to the recipe was to double the spices as recommended by others for more bite.

Rory's Most Wonderful Corn Bread

This was one of the first recipes I tried from this site a couple of years ago. I have used it regularly since then and everyone in my family loves it. I usually double the recipe and make it in a 9x13. I’ve used both fresh steamed and frozen broccoli with success but the frozen is certainly easier. When I double the recipe I just throw in the whole box, which is a bit over 1 cup but no one seems to mind. This is great leftover as well, which is always important to me.

Baked Cheddar Bacon Spread

I made this for a family barbeque. Everyone gave it rave reviews but I thought it looked a little greasy and overall unappealing. It was very easy to make though and held up well for traveling. And since I got several requests for the recipe I figured it deserved a four. It’s not my favorite hot dip/spread but I think I would try it again with a little pepper and garlic for more flavor.

Easy Peach Crisp I

With a lot of the recommendations from other reviewers this recipe rates a five. I used fresh peaches (4 or 5) and left the skins on for simplicity. I sprinkled ½ cup white sugar and some cinnamon and nutmeg over the peaches. With the cake mix I cut in a chilled stick of butter with a pastry blender and added ½ cup brown sugar, ½ cup oats for texture, and more cinnamon & nutmeg. It turned out wonderful but very sweet. I think next time I will cut out the brown sugar all together. It seems like the cake mix would be sweet enough on its own. I also found that the peach skins became tough over time. They were barely noticeable the first night, but when I ate the leftovers they were kind of chewy and annoying. So I guess if I knew we were going to finish it in one sitting I’d leave them on for rustic appeal, but otherwise remove them. Thanks for the recipe and everyone’s suggestions. I had a lot of fun with this one!

Almond Crescent Buns

I have made these dozens of times for family, friends, bruches, showers...you name it! They have always been a HUGE hit. I still follow the recipe exactly (which is rare for me!) They are wonderful warm and fresh. However, I often make them the night before for a brunch (if I have lots of other things to prepare) and keep them in the fridge. They are just as amazing served chilled. Rave reviews all around!

Oatmeal Toffee Cookies

A nice flexible recipe base. I added some leftover white chocolate chips and coconut....yum... My toffee bits didn't have chocolate. I also used toasted hazelnuts instead of pecans because that was all I had. I wasn't sure at first but everyone kept going back again and again and again, so I guess they turned out okay. :)
