Pumpkin Gingerbread

Made half with raisins and half without. I actually like the bread with the raisins best. But both were great. Used a cinnamon cream cheese spread on some slices and boy was it yummy! Used 1.5 times the seasonings. Baked at 325 as recommended by others. Made one large loaf and three minis. Nicely done frosty.

Peach Cobbler Muffins

Even my fussy family members that swore they didn't like peaches enjoyed these. The servings are for 16 muffins which is too much for a standard 12 muffin tin. We made 6 jumbo muffins and 12 minis and it was perfect. Nice flavor and moist texture. The seasonings didn't overpower the yummy peaches.

Refried Beans Without the Refry

I've made these several times now. I've learned to soak the beans overnight beforehand. I also use lots of garlic and a can of rotel with diced chilis while it's cooking, and then 1/2 stick butter (rather than traditional lard) and mozzarella cheese after mashing them. Love these!!

Peanut Butter Brownies II

Base is a good basic brownie recipe. Nice compromise between gooey and cakey. I used only 1 block cream cheese. Everyone at work loved them.

Vanilla-Almond Fruit Tart

Made this exactly as the recipe stated the first time around. Very good. Since that time I have used this as a basic template for lots of different variations. White chocolate pudding is my favorite but we've also used cheesecake pudding mix. For crusts I have used chocolate chip cookies (the crunchy ones), store bought shortbread crust, and ginger snaps. You can't go wrong. It's all wonderful! And if you use fat free sugar fee pudding, fat free cool whip, and smik milk- it's almost guilt free. Some times I skip the crust and then it's totally a yummy guilt free dessert.

Brownie Mallow Bars

Beer Cheese Pretzel and Dip

The dip is wonderful. So smooth and creamy. You definitely have to use a food processor though- don't try to handle beat. We served with a dollop of Rotel (diced seasoned tomatoes) and served with nachos and veggies to dip.

Classic Caramel Corn

Best ever made or bought! I doubled the recipe (used 4 bags microwave popcorn) and used half light cornsyrup and half dark. It was perfect! It made two very full gallon size ziploc bags. Perfect for family movie night and then some.

Blueberry Coffee Cake

Loved the coconut topping and will take this idea to other recipes- sweet and crunchy without all the extra fat and calaries of a struesel topping! Not sure about the cake though...It had a strange texture- kind of heavy and solid. The overall flavor was good though.

Chocolate Walnut Fudge

I had never made "real" fudge before. This was excellent! I followed the directions closely but also read through the handy hints from other users (big pan, candy thermometer, correct amount of milk, varying mix of chocolates, etc...). The only other change I made was to the nuts. Instead of walnuts, I used toffee bits stirred into one batch and crushed candy canes on top of the second batch. Both were amazing! Today I'm going to try it with dark chocolate and the candy canes again!

Oatmeal Toffee Cookies

A nice flexible recipe base. I added some leftover white chocolate chips and coconut....yum... My toffee bits didn't have chocolate. I also used toasted hazelnuts instead of pecans because that was all I had. I wasn't sure at first but everyone kept going back again and again and again, so I guess they turned out okay. :)

Almond Crescent Buns

I have made these dozens of times for family, friends, bruches, showers...you name it! They have always been a HUGE hit. I still follow the recipe exactly (which is rare for me!) They are wonderful warm and fresh. However, I often make them the night before for a brunch (if I have lots of other things to prepare) and keep them in the fridge. They are just as amazing served chilled. Rave reviews all around!

Easy Peach Crisp I

With a lot of the recommendations from other reviewers this recipe rates a five. I used fresh peaches (4 or 5) and left the skins on for simplicity. I sprinkled ½ cup white sugar and some cinnamon and nutmeg over the peaches. With the cake mix I cut in a chilled stick of butter with a pastry blender and added ½ cup brown sugar, ½ cup oats for texture, and more cinnamon & nutmeg. It turned out wonderful but very sweet. I think next time I will cut out the brown sugar all together. It seems like the cake mix would be sweet enough on its own. I also found that the peach skins became tough over time. They were barely noticeable the first night, but when I ate the leftovers they were kind of chewy and annoying. So I guess if I knew we were going to finish it in one sitting I’d leave them on for rustic appeal, but otherwise remove them. Thanks for the recipe and everyone’s suggestions. I had a lot of fun with this one!
