Cream Puffs

Reviewed: Mar. 1, 2012
Absolutly delicious and elegant! I never bought the ones that come frozen from costco, but my mother-in-law did, and I am so against anything frozen, processed, or filled with preservatives therefor I make everything I can at home! SO I finally came around to making these. I had perfect results. I baked them at 400 degrees in my gas convection vs. 425 bc gas usually bakes faster. So 25 min was perfect they were golden brown and the puffed up perfectly as well. I did poke a hole after they came out but it wasnt even necessary bc they had created their own little holes bc they puffed up beautifully. I had no problems whats so ever this is a no fail recipe and easy if u follow. OoO and I filled these beautiful little puffs with lemon pastry cream oooo soo elegant and delish. I will however try the vanilla or white chocolate pudding filling suggested and will drizzle with chocolate next time too. Thanks for a great recipe.

I also added 3/4 c. of cocoa in the frosting and only used 4 c. icing sugar... tastes wonderful.... THis is a great recipe.... thanks sandy.

Lemon Curd

Reviewed: Aug. 26, 2010
lemmonyyy licious.....I followed to the "t" except like usual i always add extra flavour... soo i did lots of lemon zest (3 lemons )and the juice of all 3. I t did take a long time over med-high heat to get thick. In the end I ended up adding 1 1/2 tbsp. cornstarch to thicken it up more. I like my lemon curd to be thick enough to eat with a spoon. I refridgerated it and it thicked up perfectly. delicious puckery goodness.. thanks for sharing.

Dark Chocolate Cake I

Reviewed: Apr. 14, 2010
Yummmy, delicious, decadent cake to make and eat. My 2 year old daughter and I made it last night. She enjoys baking with me.... lol.. she got more chocolate on her than in the bowl. lol.. .. It was really a delicious cake.. we used half white sugar and brown. I used fresh brewed strong coffee.... I was making this cake for my husband.. the chocolate lover...:) I have made the Hershey cake from this site also.... but I like this cake recipe because it is a dense. chocolaty cake... holds better... I still like the Hershey cake for cupcakes....its fluffier. I also made it in a bundt pan and it turned out great.. cooked it for 1hr. 1/2. I made a glaze also... I melted choc.chips and thinned it out with milk and added honey for shine.... and shaved some milk choc. on top... was a great cake.. thanx

Banana Crumb Muffins

Reviewed: Apr. 11, 2010
yummmmmO. I just finished gobbling one down.. umm umm.. the perfect topping to go with these amazing muffins. The aroma is so lovely to wake up to. I made a few different versions. I also used oil instead of butter.I wanted to make it a healty version for my daughter, so I added oatmeal in place of the 1/2 cup. of flour. I also added a tbsp of oatmeal in the crumble topping for that extra crunch. So I made some with walnuts and chocolate chips and some plain.... I also added cinnamon and nutmeg into the flour mixture. I had to try it plain and its so delicious. thankx for and awesome recipe.

Fresh Pineapple Upside Down Cake

Reviewed: Apr. 3, 2010
yummy... the best pineapple upside down cake I have ever had. I used a 8 inch square baking dish.worked out well.. It was so delicious. When I took it out of the oven, there was still a lot of the sauce that was bubbling in the oven..but the 10 minutes it stayed in the pan for it ended up soaking up all that yummy sweet sauce ... the cake was dense... but thats how it suppose to be.. so overall it was a perfect cake. And for sure use Fresh pineapple It really brings out the flavour. especially if the pineapple is sweet. I also didnt have pineapple juice so i used O.J which tasted great also.thanks.

Orange Sponge Cake Roll

Reviewed: Mar. 30, 2010
thank you... This is a very delicious cake. Light and airy.. l made it for my father-in-law and he approved... I luved the spong it was light as air..and not to sweeet at all. When I was making it I thought that 1 1/4 cup of marmalade may make it too sweet.. and I was right... I might try to add whipping cream in the marmalade next time to make it less sweeet.. other than that it was great. One suggestion... make sure you roll the cake onto a towel after u take it out of the pan... if u wait to long to roll it... and roll it tight. very versitle... can make it with any kind of filling.... im going to make it a chocolate spong next time, kind of like a swiss roll .... thankx again.

Chocolate Sandwich Cookies I

Reviewed: Mar. 19, 2010
I'm giving the Filling 5 stars... I didnt use the cookie recipe because a lot of the reviews said It was more of a cakey cookie and I'm trying to imitate Christies FudgeeOs cookie for my hubby. I ended up using the "chocolate mint sandwich cookied" recipe from this site. The filling was AMAZING..... Delicious.. I liked the marshmellow cream thats what led me to use this recipe. It was the only recipe that called for it. I added cocoa powder to it because my hubby is a chocolate fan ... and again I'm makeing fudgeeo's. THanks again this is a versitle filling recipe also.. can try many things with it. so thanks again.

Chocolate Mint Sandwich Cookies

Reviewed: Mar. 19, 2010
this is an awesome cookie. I kept everything the same except for the 2 cups of choc.chips. I only had a cup on hand so I used 3/4 of a cup of cocoa powder. yummmy.I also used the filling from "chocolate sandwich cookies I" from this site and added cocoa powder to make it chocolatey. My intention was to make my husband a sandwich cookie similar to Christies "fudgeeOs" minus all the added hydrogenated, glucose-fructose, enriched "stuff" they put in to keep it on the shelf longer. I also held off on the mint... although I love mint..but hubby doesn't so I left it out:( I also took another reviewers tip and made them bite size. definitly makae them bite size.... other wise I think they are tooo big and you would feel guilty eating two... where as if they are bite size you can sneak in a few more and no one will no.....;) I also rolled them into balls and flattened a little.Other than that.. thank you will definetly make again... its a very versitle recipe ...I'm looking forward on experimenting with it some more.

Buttery Soft Pretzels

Reviewed: Mar. 1, 2010
yummmmmy... the pretzelmaker can keep their pretzel because I can now bake my own fresh pretzels right at home. thankx christa. this is an awesome recipe. I tried the "mall pretzels" from this site.... but the dough wasn't as I would have liked it to be... it didnt have that 1/2 cup of sugar or tbsp of oil so it made a dryer, tougher dough. I personally don't like to judge a recipe before I try it.... so with that said, this recipe was excatly like as it states it is.. "soft buttery pretzel" chewy and sweet. didnt change a thing... I did dip it into the soda solution for at least 10 sec. or longer like one review suggested. and I also sprinkled some with cinnamon sugar for an even more sweeter touch. thankx again christa. amazing. UPdate:09/29/11 ......made again... using my kitchenaid this time... definetly use it if u own one..and well i did use 5 cups of flour but did need to add a little more water....i made small pretzels for my little girls hands...they were soooo delicious like always.. thank again

Downeast Maine Pumpkin Bread

Reviewed: Nov. 22, 2009
yummy.... thats for sure. I used a big can of pumpkin puree, 796ml. and it was delish. I only used 1/2c. oil. and i did half brown sugar and half white. It tastes like pumpkin pie but u can eat it with ur hands. I also added walnuts for that extra crunch. and turned out wonderful. It made a bundt cake and a loaf for me. luved it ...I will add more spice to it next time.. even though I did add more then the recipe called for. but for the amount of pumpkin puree that I used it could have definetly handled more. thanks a lot for a wonderful recipe. will make again and again.I might try icing it with cream cheese frosting next time.. but it doesnt need it. unless ur taking it to a party then it would look good frosted. otherwise it great on its own along side a cup of coffee.

Brooke's Best Bombshell Brownies

Reviewed: Nov. 20, 2009
YUMMMMM "O".. A MILLION TIMES OVER!!!! thank u for posting this wonderful recipe. It so hard to find the best brownie recipe. My recipe is so similar except it has only 1/4 c. cocoa and 2 cups sugar. so the extra addition is what completed my brownie recipe. I have been trying so many things to make my recipe fudgeier and chewy and ur recipe helped thank u. I make mine in a large sauce pan and I also wisk the eggs seperatly in a bowl so I dont add too mush air into the batter. then I fold gently. Remember a good brownie always has at least 4 eggs and no baking powder and is dense. so the less mixing u do to it the better the results. I also did half brown sugar and half white.thanx brooke they truely keep to their name. and to anyone who is looking for the best brownie recipe........ look no longer ... this is it.
