Quinoa with Chickpeas and Tomatoes

This is an excellent quinoa recipe! I have to say that I did make a few changes though. I used chicken broth in place of the water. I added the juice of two limes. In place of the 1/2 teaspoon parsley, I used about a half cup of cilantro. For a little extra seasoning, I added some Mrs. Dash. This recipe yields very well to many adaptations. Will make again. Soon, I hope!

Jonny's Easy Garbonzalicious Tangy Artichoke and Bean Salad

This was a really excellent bean salad. I made a couple of changes. I decreased the oil to 1/3 cup and added a teaspoon of sugar. Yum!

Spinach Pasta Salad

This was really good. It is a very versatile recipe where you could add anything you like in a pasta salad. I used penne pasta. I decreased the salad dressing to 1/2 cup to reduce the fat. It was still excellent. I used Ken's Italian Dressing with Romano cheese. I recommend adding the spinach just before serving to prevent wilting. Next time I will add some boiled eggs. I did add a jar of pimientos for color. Yum!

Pea Salad II

This was really delicious. I made it according to the recipe. Make sure to use a good ranch dressing (Hidden Valley is our favorite!). My family loved it.

BUSH'S® Sweet Bean Salad

This was just okay. I think just the plain Bush's Original Baked Beans without all the additions taste better than this recipe does.

Beaker's Vegetable Barley Soup

I really enjoyed this soup!! I sauteed the onions, celery and carrots with a few cloves of garlic in a tablespoon of olive oil. Then I added the rest of the ingredients. I used beef broth instead of the vegetable broth. I threw in some fresh parsley and spinach. YUM!

Peanut Butter Cup Cookies

What can I say but yum? If you love peanut butter and chocolate, you'll love these cookies! I used red and green sprinkles on top for Christmas. This recipe is a keeper!

Cranberry Icebox Cookies

Yummy! This were really crisp and buttery! I followed the recipe except I added chopped dried cranberries and chopped dried kiwi for my Christmas colors. I didn't have any walnuts, so I used pecans. I will definitely save this recipe!

Angie's Dad's Best Cabbage Coleslaw

This was good, but I thought it was too sweet and too watery (Even tho I made it a day ahead of time). Next time I'll cut the sugar in half and all the dressing ingredients in half. Then it just might be perfect!

Special Deviled Eggs

I really like this! Of course, it has two of my favorite things, sweet pickle relish and horseradish. This is a definite keeper at my house! I even chop up the eggs and make egg salad sandwiches out of it! Great.

Quick and Easy Vegetable Soup

Mexican Rice II

Pollo Fajitas

This fajita marinade is excellent! My husband and I aren't meat eaters, so I marinated onion and red and green bell peppers. We loved it. The marinade gives the vegetables such a great flavor that if I used the chicken, I'd throw the vegetables in the marinade too! Great!
