Angela's Awesome Enchiladas

I make enchiladas all the time and this is the first recipe my family really commented on. In fact it's been requested to have at least once a month. I followed the recipe using a rotisserie chicken and only used one tablespoon of taco seasoning since I have it in bulk and subbed some chicken stock that I had open for the water. The leftovers - if you have any - reheat beautifully too.

White Cheese Chicken Lasagna

I made this according to the recipe - using fresh sauteed and drained spinach. It looked wonderful but we found this rather bland - not bad but not flavorful. If I make it again I'll had much more seasonings.

Perfect Berry Shortcakes

I've made this twice now, both times to great reviews but serving them warm was the best!! I use UNbleached flour and can't tell any difference in appearance, they are golden brown and delicious. I didn't roll out just hand-patted six shortcakes - cleanup was breeze - one bowl, one measuring cup/spoons and no food processor to take apart and clean. The egg white wash/sugar topping is worth the extra effort. Restaurant quality.

Mama's Asian Chicken and Rice

Excellent easy recipe. We loved it. Better than any asian style orange chicken takeout and healthier too. I took others suggestions and doubled the sauce except for the crushed red pepper flakes (since the family can't take too much spice) and used low sodium soy sauce. I only browned the chicken about six minutes - it cooks up tender in the sauce. Be sure and spring for the Chinese five-spice powder - it's worth it and you will be making this again and again.

Leftover Turkey Cheesecake

This dish couldn't be easier, but I thought it was just okay - kind of bland. Half the family really liked it - something different and easy for leftovers. Not sure if I'd make it again though.

Tuna Melt Sandwiches

My family loved these and I enjoyed making something different than plain tuna sandwiches. Like others I was wary of how one can of tuna could produce that many sandwiches so I added an extra can and a full cup of celery and cheese (instead of the 3/4 cups)and baked them for 20 minutes. Well, it made a huge amount - I easily had six sandwiches and it would probably make eight but I stuffed the six buns I had really full. Next time I'll stick with the quantities as written. Thanks for a nice twist on a tuna sandwich.

Garlic Chicken

This has become a regular dinner item at our house. It's so easy and SO good. Be sure and use 2 tsp of crushed garlic, not two cloves. I generally have the shredded parmesan on hand and just run a handful or two through the mini food processor prior to using in this recipe. That way I can avoid the canned cheese - although I've used it in a pinch and it's fine. Thanks for an easy, moist, chicken breast recipe!

Turkey Pot Pie I

I followed the recipe exactly, but pre-baked the bottom crust for 7 minutes. Be sure and let the filling cool to room temp before putting it into the crust. Fantastic!

Chicken Pot Pie IX

Followed the recipe exactly and it was really good, the family raved. The second time I did increase the sauce and it was even better. I love that this doesn't used canned soup - just fresh ingredients. Thanks for a easy, delicious recipe.

Slow Cooker Turkey Breast

Great idea! I've made this several times and it's been delicious every time - even when I left it in too long. It's great to have turkey breast on hand for sandwiches, soups, etc. The juice/gravy is amazing too.

Easy Batter Fruit Cobbler

I made this exactly as directed in the recipe (without reading any reviews) and it was great! I'd give five stars just on ease of prep alone but the taste was really good as well. How nice to have a home baked dessert on a weeknight. Great way to use up last summer's berries from the freezer.

Quick and Easy Alfredo Sauce

Simple, FAST, and delicious recipe. I had everything on hand, no shopping or chopping needed. I halved the recipe for two of us and added some leftover rotissere chicken breast. The only change was to add a bit of fresh ground nutmeg. This will be a go-to recipe for busy nights.

Caramelized Onion and Gorgonzola Pizza

This wonderful! I used whole wheat pizza dough and sprinkled chopped walnuts on top before baking. Then, cut into squares and served as amazing appetizers. Great with drinks.

Pumpkin Fudge

I took this to Thanksgiving and everyone loved it! I used pumpkin pie spice in place of the cinnamon as suggested. Although I did use a candy thermometer, it hit soft ball stage (230 degrees) at exactly 18 minutes which is what the recipe says. I'll definitely be making this again.

Gravy Baked Pork Chops

A big hit with my family. I used some other reviewers suggestions and after browning the chops, I sauteed half a chopped onion, about 1/2 teaspoon minced garlic and a handful of mushrooms in the same pan, then added to the soup/milk mixture. I actually forgot the water and the "gravy" was perfect. These were very lean and thick chops but not dry at all. I served them with garlic mashed potatoes and green beans. I will absolutely make these again.
