Beef Stew VI

Added mashed sweet potatoes for thickness since I didn't have corn starch. Also put flour and pepper in a bad with the meat and tossed to coat before browning. I used 1.2 cup red wine, threw in some green beans, and per another review added a tablespoon each of ketchup, worchester, and A1. OH, didn't have rosemary so I used thyme instead. This is THE BOMB! Served over brown rice.

So good! But I took the advice of waiting until the last 5 minutes to put the topping on and they were already too cooked to do so:( Still good, but would have been nice to have the topping.

Fresh Pear Pie

OMG! This is amazing! I mixed 5 peeled slices pears with everything, and used a pre-made pie crust. I had enough to make a lattice crust too... I didn't dot with butter or use any lemon juice, both are totally un-necessary and the lemon zest (I did just about the whole-medium sized-lemon) gives it just the perfect amount of lemon. SO GOOD!

Fresh Asparagus Soup

This is great! I used about 16 big white asparagus, bottoms snapped off. Sauteed in 1/2 C veggie broth. Meanwhile did the butter/flour/rest of broth (1.5 C- I just did 2 cups water total with a boullion cube then split it up) in another pot. I mixed it all together with the milk, using an immersion blender, then added yogurt and lemon juice (about half a large lemon), with pepper. No salt, boullion is already salty. Very good! Much easier that the recipe implies.

Cheddar Biscuit Cups

Used half whole wheat flour, and did the powder & salt to make my own self-rising flour. I did half the salt like other said. I also did drop biscuits on parchment, at 400 for 20 minutes. YUM! I probably used a little more than half a cup cheese too:)

Pumpkin Turkey Chili

Per other reviews- Add more of the spices plus some cumin, 2 cans of tomatoes, a can of beans (I used kidney), a can of corn. Oh and cilantro. YUM!
