Mexican Style Cornbread

Very dense(my family did not like the consistency)and quite bland even though I used two whole fresh jalapenos, I will stick with my basic cornbread and honey butter.

Baked Potato Soup

This is a good base for Potato Soup, personally did not care for the Basil. Next time I would leave it out. I also didn't care for the overwhelming bacon flavor.

Yakisoba Chicken

This was a big hit at my house last night. I doubled the sauce for the chicken except for the chile paste, I only used 3T. I added parboiled green beans and pea pods and red peppers and mushrooms...yummy!

Ken's Kickin' Posole

This was really good although I made some adjustments. I didn't use any bacon, I thought it would take away from the actual flavor. I also left out the cloves, personal preference. I fried the pork in a little olive oil instead. Otherwise I followed it exactly and it was so delicious and comforting. Served it with some warm corn tortillas.

Make-Ahead Turkey Gravy

I made this last night for our dinner tomorrow, it is absolutely awesome. The only thing I did different was I used 3 wings and 3 thighs. The house already smells like thanksgiving. Thanks for sharing this amazing recipe...Happy Thanksgiving!

Janet's Rich Banana Bread

This was awesome, so moist and flavorful. The only change I made was I used 1/2 cup white sugar and 1/3 cup brown sugar. I also used room temp butter and added a pinch of cinnamon...yum!

Oven Roasted Red Potatoes and Asparagus

This was very good although I tweaked it a little, I always do. I parboiled the potatoes then baked them with the garlic and some sliced white onions for 10 minutes. I then added the asparagus and baked for another 10 minutes. I also cut way back on the herbs as they are both extremely strong. It was a very good side dish with grilled New York Steaks! Yum

Peruvian Chicken Soup (Aguadito de Pollo)

I stated out by making homemade broth, boiled a whole chicken with celery, onion, garlic, cracked pepper and a bay leaf. Then strained the broth, shredded the chicken and sat aside. I then sauteed the garlic, onion and chiles (I used 2 and it still wasn't real spicy) in only a 1/4 cup of olive oil 1/2 cup seemed like too much,then added the shredded chicken, broth etc and continued on. It was really quite good on the cold rainy night we were having here. Thanks for the recipe.

Fra Diavolo Sauce With Pasta

This was really delicious and simple, I used all shrimp since that's what my family likes. We love it spicy so I added a few red pepper flakes to the shrimp while I sauteed them.

Tacos in Pasta Shells

This was really good although it tasted more like an enchilada casserole than a taco. I added the crushed chips to the cheese and sprinkled it on together. The chips got slightly soft but still had a crunch...yummy.

Antipasto Pasta Salad

This is so good, only made a few changes. I used havarti cheese, added some diced artichokes and I used grape tomatoes. Took it on a picnic in the mountains and everyone loved it. The dressing really makes the salad.

Stir-Fried Vegetables

I was a little apprehensive at first because of the Corn Starch. I should have went with my gut feeling and left it out. It ruined the whole idea of stir fry by having a sauce like quality to it.

Fish Chowder

This was so good, I added a diced carrot with the onion and celery. I also added a can of chopped clams along with the Cod. I used a little more Old Bay than it called for but I think that should be added to taste. A warm crusty loaf of sourdough bread and everyone was happy!

Spicy Rapid Roast Chicken

The seasonings worked well with the chicken. I added a half of lemon, 3 cloves of garlic and a couple sprigs of fresh thyme to the cavity of the chicken. I cooked it on a rack and put water in the bottom of the pan. The last hour I basted it with the drippings...yummy.

Poblano Chile Enchiladas a la Gringa

This was very good although I tweaked it a little. I boiled the chicken with the ingredients (also threw in a whole serrano chile, gives wonderful flavor without the heat). Then shredded the chicken and simmered it with half the sauce for about 30 minutes. Also used Jack cheese in place of mozzarella. Homemade rice and beans and it was a really nice mexican dinner, the family loved it!
