Irish Cream Truffle Fudge

All I can say is it has a wonderful flavor. I didn't find it overpowering at all. I made 3 batches; one as written, one with caramel Baileys, and one with Mint Baileys. They all went over well.

Peanut Butter Choco Chip Cookies

These have a wonderfully peanut buttery taste that most peanut butter cookies don't have. They remain moist for longer as well. I make these instead of regular peanut butter cookies now. I have a friend that is not fond of nuts in cookies, I've substituted oatmeal for the nuts and it came out fantastic.

Brie Pecan Rollups with Raspberry Sauce

My husband now requests this on a regular basis. The Original recipe is good, but after a few trials I found that using Garlic and herb flavored Brie gives a better flavor than just the regular brie with onion and garlic added to it.

Beef Marinade I

Simply Delicious, excellent combination of flavors. You can substitute beef broth for the oil and put it in the crock pot with a roast and it really is fantastic.

Grilled Shrimp and Apple Skewers

This is one of the best marinades that I have ever had on shrimp. the combination of sweet and spicy really make this shine. I've done this with chicken, scallops and shrimp. Everyone that has tried this keeps telling me I have to give them the recipe.

Mandarin Orange Chicken

This is an excellent recipe, the chicken remains really tender and the flavor of the sauce is great. It's not too orangy or too hot. Throw in some frozen broccoli and water chestnuts when you put in the oranges and serve over rice and it becomes a complete meal.

White Chocolate Raspberry Cheesecake

This is definitely a favorite in our house. I made in the water bath and let it cool in the oven for an hour. It came out with no cracks or sinking at all. The second time I made it I heated up raspberry jam instead of doing fresh raspberries. I worked just as well and was less time consuming.

BB's Chicken

This is an easy and tasty dinner. You do need to season the chicken a bit with some poultry seasoning and garlic. Just don't add sallt. The stuffing makes it saty enough. Overall a very good recipe.

Beef Tenderloin in a Port Shiitake Reduction

This really is a good recipe, I've made it several times now and It's now on a regular rotation at the house. I've substituted stew meat instead of tenderloin in the past and it has come out just fine. It's the flavor that really works for this.

Rhubarb-Pineapple Jam

Elegant Wild Rice Soup

This is a great soup. Coming from Minnesota like I do, I've had all kinds of wild rice soup and this is one of the good ones. It does need a little bit of extra flavoring, add a couple cloves of garlic with the onion and that helps add some flavor to it.

French Onion Soup Gratinee

This soup is fantastic;it takes a while for the carmalization of the onions, but it's well worth it. Even people that don't like French onion soup raved about this. Just make sure you use the Balsamic vinegar or you will end up with gray soup.

Apple Filled Chicken in Pecan Creme Sauce

Don't get me wrong, this is a good recipe. It's just that the sauce is so powerfully sweet that it overwelms the rest of the flavors. My guests did rave that it was an excellent meal. I used Gouda cheese; which is stronger than provolone, but it still needs something stronger. I'm thinking next time I'll use Blue Cheese and tart apples to try and even out the sweetness of the sauce.

As unusual as mixing these ingredients sound, I've found that everyone that has tried it has wanted the recipe. It's easy enough for anyone to make, I definately recommend doubling the topping though.

Everytime I've made this it's been a hit. There is definately a lot of sauce left over, so I always make mashed potatoes with it and use the sauce as a gravy.

Crab-Stuffed Filet Mignon with Whiskey Peppercorn Sauce

This is a fantastic recipe! It takes a while to make, but it's worth it. I find that using the juice from the canned crab meat works instead of the water or shrimp stock as well. I also use Brandy instead of Whiskey. I'm not much of a whiskey fan, and I find the brandy has wonderful flavor that compiments this sauce well.
