Monday Night Mac and Cheese

This turned out awesome (even though I made it on a Thursday, not Monday, lol!) I was skeptical of the directions, as were other reviewers and read them several times to make sure I was reading them correctly. So I revised the recipe to 8 servings, didn't know what the % of cream was so I used 1/2 & 1/2, used cheddar cheese, put it in a casserole dish, topped with more grated cheese & paprika and baked at 375 for about 15 minutes while the salad was being made. Oh so easy and delicious!

The Best Zucchini Fritters Ever

We like things spicy in our family so I added diced jalapeño peppers to the mix. As other reviewers noted, the mix was very watery even after squeezing all the water out of the zucchini I could and I omitted the milk as recommended by others. I still had to add quite a bit of flour to get it to the right consistency for frying. All in all, they were really good and by adding the jalapeño peppers, they tasted a lot like jalapeño poppers, which was a nice surprise.

Baked French Fries I

My family, and quite frankly I, was amazed at how easy to make and awesome these fries turned out. You have to be patient with the baking time but they are SO worth the wait! I'll never buy frozen French fries again.

Herbed Scalloped Potatoes and Onions

Made this last night after reading many reviews. I took advice from other reviewers and customized the dish for my family. I carmalized 2 onions along with the garlic (thanks GEOMASON) and layered in the potatoes. I didn't use low sodium chicken stock so I omitted the salt. During the last 15 minutes of baking, I uncovered the dish, sprinkled the top generously with shredded cheddar cheese then garlic croutons. My family loved it! The only reason I didn't give it 5 stars was because of the grayish color. I didn't think it was all that appealing. Anyone have any suggestions to brighten up this great tasting dish?

Corn Chowder with Sausage

Quick and Easy Chicken Chili

This was so easy to prepare yet no one would ever know it was practically as simple as opening a few cans/jars. I didn't have any hominy on hand so I used one can of whole kernel corn and one can of corn with chipotle (Green Giant) and salsa with white corn & black beans (Great Value brand from Walmart). I also used the already grilled, frozen chicken strips (Foster Farms). I followed the advice of other reviewers and used chicken broth instead of water. My family loved it so I will be making it time & time again.

Chicken Enchilada Casserole II

I have been fixing this dish since 2006 and realized I had never written a review on it...so here goes! This IS my family's all time fave. We have exchange students from all over the world and this is also the dinner they request time & time again. After making it so many times, I have come up with some worthwhile shortcuts & tips. 1) I use chicken tenders that I cook in the microwave ahead of time and cool completely (I got tired of burning my fingers while shredding hot chicken, but don't over cook it!) 2) add the chicken to the entire soup mixture and mix...I didn't see any benefit in not doing this and it skips a step while assembling the layers 3) add a can of chopped green chilies (yum) and/or chopped jalapenos if you like a little heat 4) try using black beans instead of chili beans 5) I always have to cook this about 15 minutes more than the recipe calls for 6) let it stand before serving, although in my house that never happens. It is runny if you don't let it rest, but my family doesn't care...they can't wait to eat it! This is simply thee best!

Curried Coconut Chicken

We love curry so I doubled the amount of curry and also added 1/2 each thinly sliced orange & yellow bell peppers. I didn't mind the sauce being a bit runny because I served it in a bowl with chopped peanuts and cilantro on top. This gave it a crunch & a flavor punch and made it look very appetizing.

Chicken Rice Salad

This is a great "base" recipe, meaning you can add whatever ingredients you want to customize to your taste. For example, after reading the reviews, I too decided not to use green pepper however, I added golden raisins and curry powder and a few more almonds. This was outstanding but next time I will add even more curry.

Creamy Chorizo and Chicken Soup

I try 2 - 3 recipes a week from allrecipes.com but this one, oh my...I just couldn't keep my thoughts to myself about this one. I was skeptical that the melding of the flavors would be good, but they were beyond good. This is one of the most exceptionally good recipes I have ever tried. My mouth waters just thinking about it. It is on the spicy side, so it's not for the faint of heart. Superb, stupendous and totally delicious! My husband immediately put it in his top 5 of all time. The ONLY thing I would change is not to add the garlic salt but rather just some more fresh garlic. It was a bit too salty for me. And, as the original author of the recipe said, I did cut the chicken into smaller pieces. Thank you for sharing your recipe. I will be making it very often.

Chicken Satay

I've made this for my last two parties and my guests love it. They try to identify the ingredients, then when they can't quite figure it out, they ask me what's in it. It is so easy to make and has unbelievable flavor. This will be my favorite party Hors d'oeuvre. By the way, I didn't change a thing about this recipe, just made it "as is". It is perfect.

Oven Baked BBQ Ribs

What a hit this was with my guys. My 14 year old didn't say a word all through the meal...just grunts of pleasure. After the meal he told me I had turned ketchup into magic. They were awesome and easy to make. Thanks Vicky.
