Sunshine Toast

As a mother of 5, I need to cook in bulk. I make these "Toad in a Hole" as we call them, all the time. I usually use a loaf of bread and a dozen and a half or so eggs. I make them all first, keeping them warm, then call the crew to breakfast. Otherwise, I can't keep up with the demand. I have also added pre-cooked and crumbled Hormel bacon, I'll take any short cuts I can. Great recipe....one that will live on forever. FYI...these eggs have even been on the "big screen". In the movie Moonstruck, Cher's mother in the movie, sorry, her character name escapes me, is making them one morning. Check it out.

Cream Cheese Squares

I make these squares more than 2 dozen times a year!! They are the most popular thing I make. I'm a always asked to make them for everything. You will always be a hit, 100% of the time when you bring these to any event. I prefer to line my baking pan with aluminum foil for easy removal and refridgerate overnight. I then remove them from the pan and slice then arrange them on a serving platter. Works great everytime,

Simon and Garfunkel Pot Roast

I made this tonight.. loved it. Good old fashioned chuck roast dinner. I removed the meat (which I doubled, but kept the gravy and seasoning the same)and kept it warm and found the gravy to be kinda thin and bland, so I seasoned it with some beef base, onion powder, salt and pepper. Then thickened it, on high, with some flour and water. Two thumbs up by my family!!

Tuna Noodle Casserole III

FINALLY! Someone who makes Tuna Noodle Casserole the way its suppose to be made! We cut white bread into cubes and brown them in butter then put on top of casserole before baking.. but other than that... GREAT!!

Paprika Chicken with Mushrooms

Yum!! This dish was delicious!! I of course had to triple the recipe for my big brood.. and we loved it!! I almost made myself sick...because it was so good! I did all the prep work ahead of time.. cooked the chicken in batches, returned all chicken to the pan, topped with mushrooms and onions and served it with rice! This one is definitely a keeper!

Italian Sausage Soup

Mmmmmmm.. nice and flavorful and oh so easy! I love cooking like this. I switched up the beans to Navy beans, we like a smaller bean, I thought about using diced italian tomatoes instead of the stewed, but so far I've stuck with the stewed. Wonderful aroma too!! I cannot make enough of this soup and have shared this recipe over and over!! Best soup I've ever eaten!!

Italian Spinach Sausage Pie

This is one of my family's favorite meals! Very easy and even people who are not fans of spinach or sausage LOVE IT! I want to bring it to events to share its so good! One big tip, LET IT REST when it's done, it will firm up! I would say at least 15 min. to 1/2 hour. Also, this would be even better (if possible) with a side of spaghetti or pizza sauce.

Lemonade Chicken

I have made this recipe plenty of times...I had found the recipe years ago. The recipe I follow calls for you to flour and fry the chicken pieces first. I cut up bnls sknls chicken breasts into chunks, toss them in seasoned flour (salt and pepper should do, maybe garlic powder also) Fry in oil until browned. Place chicken in slow-cooker. Then pour the rest of the ingredients mixed together on the chicken and cook. You'll be very happy with the end result.

Sweet and Sour Pork Patties

I just received this recipe and read through it. I haven't made them yet, but I think when I do I will make them into little meatballs and serve them as an appetizer, kept warm in my slowcooker! Sounds very yummy!!
