Carrot Cake III

Excellent cake! I used most of the modifications suggested by gneebeanie and baked two 9" rounds for 33 mins. The cake was dense but not overly sweet. It took a double batch of frosting to cover the cake when layered. I used only 2 cups of confectioners' sugar per batch - it lightly sweetened the frosting without making it overly sweet. I already have plans to make again.

Beer Cheese Soup III

Very tasty! I made this with Sam Adams and reduced sodium chicken broth in place of the bullion and water. In order to ensure the soup was thick enough for our liking I increased the potatoes by a full cup and used an immersion blender before adding the condensed soup and processed cheese.

Chicken Noodle Soup

I followed the recipe to a T and found the soup to be really bland and lacking depth. It tasted just like a higher quality canned soup. I will not be making this again.

Apple Crumb Pie

This wasn't good at all. After a few bites, even the kids wouldn't eat any more. The orange and lemon juice adds an extremely strong flavor - I would omit them both altogether. I also found the insides too watery. The apples probably could stand being tossed with some flour to help thicken the natural juices. I have no plans to make this again.

Split Pea Soup

Delicious! I used reduced sodium chicken broth instead of water which added nice depth of flavor. My soup was fairly thin, next time I'll either reduce the broth by 1 cup or increase the dried peas by 1/4 to thicken it up.

Chicken Cordon Bleu II

Excellent! I doubled the sauce, pouring it over the chicken and finishing in the oven. I recommend using paper thin slices of ham so the saltiness of the ham doesn't overpower the chicken.

Mustard Sauce for Ham

Good basic recipe, ideal for tweaking. I cut the sugar in half at the recommendation of other reviewers - good idea, the sauce was plenty sweet with less sugar. I found the vinegar taste to be a smidge overpowering, next time I'll cut it down a few tablespoons.

Creamy Chicken Lasagna

As mentioned by others, this is a decent starter recipe. If you don't add additional spices, you'll have a rather bland lasagna. I highly recommend heavily seasoning the chicken since it plays such an important part in the recipe. Baking as opposed to poaching will impart much more flavor to the chicken. For added depth added veggies are a must. I added onions and peppers but as others mentioned mushrooms and spinach would be as well. If you like cheesy lasagna this is not the lasagna for you. The amount of cheese called for adds nice flavor but doesn't make it cheesy. For cheesy lasagna, try adding another cup of cheese.

Mushroom Chicken Parmesan

This recipe has some issues. First, the flour needs to be seasoned otherwise the chicken is flavorless. Use caution with the amount of salt used - using a salty cheese on top will increase the saltiness of the dish. Second, Parmesan cheese doesn't accent the mushrooms very well - Swiss may be a better option. Finally, the curdling that some people have complained about isn't curdling. It is the flour and cream mixing to form a lumpy "gravy" if you will. In order to prevent the lumpiness, either breadcrumbs should be used as others mentioned or the chicken should be pan fried before the cream and mushrooms are added. I will not be making again, nor would I recommend it. While the flavor is okay, it will take too much effort to tweak the recipe to make it really good.

Hot or Cold Vegetable Frittata

I made this for Father's Day brunch and needless to say, it went over very well. The frittata is rich and very versatile. I used 7 eggs instead of 6 and thought the mixture was a bit too firm for our preference. Next time I will use 8 eggs.

Orange Cake

I made the cake last night as a trial run before giving as a Christmas gift. The recipe was very easy to follow, but I was disappointed with the taste. The flavor was subtle but wasn't rich as many described. For my family, it was barely mediocre. I will not make this again nor will I recommend it to others.
