Playgroup Granola Bars

This is an incredibly simple recipe that makes delicious granola bars! I omit the raisins but add dried cherries, cranberries, blueberries, or all three! Since I also like almonds, I add 1/2 a cup of slivered almonds. I have tried many variations of these (including using splenda brown sugar instead of regular) and no matter how I make them, they get gobbled up quickly!

Pork Chops with a Riesling Peach Sauce

Wow! My family chowed down on this! I made it with a pork tenderloin roast in the crock pot and cooked it on low for almost 8 hours. I just put everything in the crock at the same time and let it go. I added ginger and more nutmeg since my family likes those flavors. The pork had a delicious flavor and when I turned the juices into a thin gravy over rice ... it was amazing! I cannot wait to make this again.

Basil Cream Sauce

This was a very tasty, easy sauce to make. I followed other suggestions here and thickened the sauce with a rue of melted butter and flour. I also used half and half instead of light cream simply because I didn't have the cream on hand. Very similar in flavor to Maggiano's Basil Cream Sauce that they serve over ravioli in their restaurants. I'll be honest and say that next time I believe I will roast the garlic cloves before adding them to the basil since the raw garlic flavor was a bit overpowering at first. My family loves fresh grated parmesan cheese so I added extra to the sauce and then grated some over top of our ravs. I could see serving this to guests with pan seared chicken and pasta.

Roasted Cauliflower Soup

OMG Jennie! This is fantastic! I cannot wait to share the recipe with friends! I did make some substitutions: instead of 1 c. milk, I added an extra cup of chicken broth (the soup was still deliciously creamy); I also substituted white wine for the sherry just because I didn't have any on hand; and I roasted 6 cloves of garlic with the cauliflower instead of using garlic oil. The soup is delicious, creamy, and flavorful. I recommend either using an immersion blender to blend until very smooth, then adding back some of the cauliflower for texture. Of course you could also you a regular blender too. Fantastic recipe!

Salsa Chicken Rice Casserole

this is a simple, yet yummy recipe. It makes a lot of food though! after we ate it, I put away enough for left overs the next night, and I was able to freeze a dinner's worth too!

Simple Scones

very moist recipe! I used salted butter and a food processor as others suggested and it was much easier that mixing the dough by hand. I also added the zest of a clementine orange and 1/2 cup cranberries. Then I squeezed the juice or the orange and mixed it with 2 tablespoons of powdered sugar to form a glaze; and I dipped the warm scones in the glaze. Very yummy!

Ocean Packets

very nice recipe! I added raw mushrooms and red skin potato quarters to the packets. I also didn't bother melting the butter. Instead of using freshly grated lemon peel, I quartered the lemons and threw them in the packets after squeezing. Next time I make this I will add muscles and season though with old bay or dill. Definitely a keeper!

Flank Steak Pinwheels

All I could here during dinner were yum's and chewing, absolutely delicious! Changes I made: I didn't use the marinade, I cheated and used A-1 Steakhouse marinade instead. I also used 1 shallot instead of the chopped onion, added mushrooms, and forgot to add the bread crumbs. Great recipe, will definately make this one again! Thanks!
