Cornish Pastie II
I grew up in Butte,Montana where these are famous. My mother made the 100's of times and I must be nearing the number myself. It seems to me any kind of beef is good to use, but freeze and before all the way thawed, cut into pieces of 1/4 " squares. (If you can find in a local store, Taco meat it is perfect and already cut) These can so good cold with catsup for days. I use 2 # of meat and about the same amount of potatoes (not in pounds, but diced up 1/4 inch) and appears to be the same as meat. In a blender with water, I mix my carrots and onions the strain for at least 1 or more hours. Season with salt, pepper and if you can get it Vegeta which can be found in European stores.

Cinnamon Cookies II
As someone said, they added a little extra flour. I made it with 2.5 cups and worked well. They are like sugar cookies, but with cinnamon and molasses. Definitely will make again. Recipe said it would make 36. I made 78. Came out perfect size. Instead of dropping by teaspoons, I rolled into a log form about the size of a nickle circumference and cut into about 1/2 inch pieces, rolled into a ball, slightly flatten them. Regular size 1/2 sheet baking pan, used parchment paper and baked for 11 min. Definitely will make again. 35 cookies fit perfectly on one sheet.

Caramels I
I have now made these for the 5th or 6th. time. Each time , getting better and better. My candy thermometer may be a little off, as 250 is too soft. Good time though to start testing by dropping in cold water and feeling and tasting the consistency. This last time I used about 2 cups of cashew nuts at the last minute, and I don't know how to describe the goodness. This is one that you can honestly say, "You can't eat just one." I STRONGLY suggest that you use parchment paper in your pan. No grease necessary and it will NOT stick. I also use a pastry cutter to cut into pieces. I also use plastic wrap as long as I can fit on the counter, space the pieces along both edges and roll up to center. Cut with scissors, then just tear pieces apart to finish the wrap. As I write this I see it is 242 degrees on thermometer, sorry, it should be slightly above 250. (MY thermometer may be off, but the water testing is the best)
