Cream of Fresh Asparagus Soup II

ah. maze. ing. this recipe was fantastic - simple to make, yet so elegant. ingredient-wise, i followed the recipe exactly. however, since my immersion blender rarely gets used, i thought this would be a great recipe to use it on. once the asparagus and onions were cooked, i used the immersion blender to roughly puree them. i then made the roux/chicken broth mix in a separate pan and added to the puree. used the immersion blender again until smooth. then finished the rest of the recipe. it was just so light and creamy. my husband is not a huge asparagus fan, but LOVED this. will be making again and again.

Figs with Goat Cheese, Pecans and Bacon

Amazing! I used dried figs and omitted the pecans since I didn't have any one hand. Also, based on some of the other reviews, I fried the bacon for a few minutes first before wrapping. Turned out fantastic and elegant!

Cranberry Sauce

Holy cow - I never knew how simple making fresh cranberry sauce could be! I changed it up a bit, using the juice of 2 oranges then adding water to make 1 cup. Also added a sprinkling of orange peel towards the end of cooking. Yum!

Alfredo Sauce

Wow, this was so easy and delicious! I used light cream and margarine, upped the garlic and decreased the parmesan just a little bit, and the consistency and flavor turned out perfect!

Hudson's Baked Tilapia with Dill Sauce

Wow! This was recipe was so delicious and easy! Definitely a keeper as the the ingredients are items I usually have on hand. For the sauce, I did use what I had in the fridge, which was Vegenaise and no-fat sour cream, but it came out with a great consistency. As others said, the sauce is also great for dipping fresh veggies.

Pumpkin Cookies I

These are some of my favorite cookies! I really like that the pumpkin is there, but not overpowering. I usually add a pinch of nutmeg and substitue chocolate chips for the butterscotch.

Sweet and Sour Chicken II

Awesome recipe! I've made it several times always to great reviews. I used broccoli, carrots and onions in place of water chestnuts and celery because it's what I usually have on hand. Great as leftovers as well!
