Ricardo's Pizza Crust

Reviewed: Feb. 1, 2006
Absolutely awesome. I have used this dough to make pizza, calzones, and cheese sticks! It is slightly sweet and I can't get enough! I have already made it 6 times!

Penne Pasta with Spinach and Bacon

Reviewed: Jan. 11, 2006
This is a great recipe for a dish that is not too heavy. Just make sure you follow the directions...I forgot to chop of the bacon before cooking it and ended up making a mess when it was already covered in garlic and then had to chop it. This dish is great and I will make it again! Thanks

Zuppa Toscana

Reviewed: Jan. 9, 2006
This dish was a great-tasting one that I will serve again. However, I did not feel that it tasted just like the one from olive garden. I did change the smoked sausage to italian sausage and I added a lot of half-and-half to make it have a little more liquid. This soup is very thick and hardy. It is a meal-not a side dish. I think you could half the amount of sausage and be just fine. However, it tasted great and I was asked for the recipe by our guests. I will definitely serve it again. Thanks so much!

Chicken Florentine Casserole

Reviewed: Jan. 9, 2006
This was a fantastic dish and it is worthy of serving to guests. Like many of the other reviewers, I used fresh spinach instead of canned...it turned out fantastic. Also, I made extra sauce and served this over pasta to make it a little lighter. This is a heavy and filling recipe but, the taste is superb! If you serve it on pasta, add a salad and some garlic bread, you have the perfect meal. My husband and our friends loved it! Thanks so much for submitting this recipe!

Cheesy Italian Tortellini

Reviewed: Jan. 4, 2006
My husband and I really liked this dish. I added minced garlic, green onions, and bell peppers to the meat when I browned it (I used 1 lb ground beef because I didn't have any Italian sausage on hand.) I used spaghetti sauce and cooked this in the oven at 350 for 30 minutes. I then added the tortellini (already cooked) and cheese. 15 minutes later (at 350) it was great. It made lots of leftovers (which are great for taking to work for lunch.) Thanks so much! This will be a regular weekly dish for our family.

Pineapple Cheese Ball

Reviewed: Jan. 1, 2006
This cheese ball is great and easy to make. I added a little seasoned salt and Chili powder to give it a little more flavor. Also, you have to drain the pinapple really well or else the cheese ball turns out soggy. This is a great addition to a little get together.

Almond Tea

This is great. Almond extract gets expensive...you can buy it a lot cheaper at Sam's Club.

Chocolate Mousse II

Reviewed: Jan. 1, 2006
This mousse tasted fantastic. I did have a little trouble getting all of the chocolate out of the blender. I think it would be easier in a good food processer. Also, I don't think the servings are quite right (It made 3.5 servings for me.) I served this in a wine glass, topped with a little homemade whipped cream (I made the whipped cream a little less sweet so that it would balance with the rich mousse) and some chocolate shavings helped make a beautiful presentation when serving to guests. My guests loved it!

Cocoa Cappuccino Mousse

Reviewed: Jan. 1, 2006
This tasted really good but turned out a bit more like pudding than mousse when I tried it.

Baked Garlic Croutons

Reviewed: Jan. 1, 2006
These taste great. I had to use extra olive oil and garlic in order to cover all of my bread pieces. Also, I could only bake for about 13 minutes instead of 15.
