Cookies 'n Cream Cake

This cake made me a highschool hero! I didn't have a lot of time between work and studying, but I wanted to bake a birthday cake for my cookies-&-cream-loving friend. Solution = this recipe! I baked it at night, frosted it in the morning, and set it down on our lunch table in triumphant glory. This cake is incredibly rich, so make sure you have a lot of people to enjoy it with you! Even a table full of teenage guys couldn't finish the entire thing (though this presented an excellent extra-credit oppertunity for my friend's next class period)! It looked beautiful with crushed oreos pressed against the sides and whole cookies arranged on top. =) Thank you for sharing this recipe!

Buttermilk Seed Bread

Two loaves. Three I-guess-I-could-eat-but-I'm-not-that-hungry family members. GONE IN 30 MINUTES. Delicious, nutritious, and utterly irresistable. I used ground flax seeds because they were all I had, and as preciously mentioned they're better for you. Thank you so much for sharing! This recipe will be used time and again.

Emma's Belgian Waffles

My family loved these! I didn't let it sit for as long as it was supposed to, since they were already drooling in the batter, but this is definately a classic, fluffy waffle. The extras were frozen for later in the week and, needless to say, made the Eggo-waffles look as undesirable as cardboard. Thanks!

Maple Cookies

I made these cookies for my class, and since there were so many, I passed some around to other school friends as well. After school, I was mobbed by hugs! It was unbelievable. I found out later that my teacher doesn't like maple syrup, but she adored these (she had 5 without thinking!). The dough was soft, but rolled fairly easily once covered in the sugar. I cooked mine a bit longer, too, until golden. This made them a little crunchier, but just as tasty and more travel-proof. I'm sure they are delicious when chewier, as well. Thank you for sharing!

Cranberry Pumpkin Bread

This is one of the easiest and tastiest quickbread I've encountered, and it's a great way to use up canned pumpkin and cranberry sauce! I'm not very religious about the spice ratio, and I usually use more than the recipe calls for, but the flexibility of this recipe is part of its charm. I also found that replacing the oil with applesauce tastes great and reduced the fat, though it shortens the shelf-life. This isn't a great concern, since it disappears so quickly! I have gotten many requests to make this; it's becoming my signature at get-togethers! Also, my family reaps the benefit of the double-loaf production. (^_~) Thank you so much for sharing!

Millet Muffins

WOW! I loved this recipe! Very healthy due to the 100% whole wheat and the millet, but still light and fluffy enough to entice my taste-centric family. I had already eaten breakfast this morning, but after sampling one I suddenky found myself polishing off another! They were but 15 seconds out of the oven, and elevated me to a state of Nirvana. The millet adds a pleasant crunch, and though I was afraid that the flavor would be bland and lacking, it was absolutely perfect. I might experiment around with substituting applesauce for the oil, to reduce fat, but if it changes the texture and flavor too badly, I think that I can cope with the slight guilt of indulging in such a yummy treat. Thank you for sharing!
