Charleston Breakfast Casserole

Reviewed: Mar. 30, 2010
Followed recipe exactly, but took advice of other readers and used "seasoned" croutons and add some shredded parmesan cheese. Turned out really good. Made it for a Sunday brunch with some friends and everyone really enjoyed it. I ate leftovers the next day, and didn't enjoy it as much though.

Sturdy Whipped Cream Frosting

Reviewed: Mar. 30, 2010
I needed a frosting for cupcakes for my 2 yr old and her friends. Thought this would be a good recipe since it didn't have too much sugar. I didn't really care for it, tasted too much like cream cheese. I added another 1/4 cup sugar which helped, but the frosting didn't hold up as well as I'd like. The warm kitchen kind of flattened the frosting out. My friends seemed to like it, but I don't think I'll be using this again.

Low-Fat Potato Soup

Reviewed: Sep. 14, 2009
My husband was on a soft diet so I needed to make a dish that would accomodate his needs and be filling at the same time. Thie soup hit the spot and he loved it. I sauteed the onions, potatos and celery in olive oil and one tablespoon of butter (just to get the flavor). Other then that, I followed the recipe and it came out delicious! Be prepared when you add the cornstarch. The soup thickens up fast! Very filling for a dinner time meal.

Chicken Tortilla Soup V

Reviewed: Nov. 14, 2008
This was delicious! It came out better then I expected. As suggested by other reviewers, I added black beans, a bell pepper, spicy corn and black bean salsa and used a chicken roaster from the supermarket. Fast and easy. It actually came out more like a stew because the liquid was soaked up by all the ingredients. YUMMO

Chicken Milano

Reviewed: Oct. 2, 2007
Full of flavor, creamy yet light. Delicious! I doubled the cream as suggested by other reviewers. I added fresh tomatoes towards the end. Next time I'm going to try adding pruschetto to give it a different layer of flavor. If anyone can come up with a lighter version of this dish (b/c of the heavy cream), please let me know. Thanks!

Slow Cooker Pulled Pork

Reviewed: Sep. 2, 2007
Thank you for this awesome recipe! It was so simple and easy. I was throwing a huge BBQ party for my husband's birthday, but didn't want to do any major cooking. I used a pork rub on the 4 lbs. of tenderloin, put in the slow cooker and went about my day stress-free. After about 6 hours, it came out perfect. The pork shredded so easily. The day of the party, I split it into two batches, using two different BBQ sauce (one hot and spicy, the other sweet and tangy). I put each batch in a slow cookers, mixed the BBQ (an hour before the party) and it was hot and ready to be served once the party started. So easy!

Chili Casserole

Reviewed: Aug. 16, 2007
I used taco seasoning rather then taco sauce as suggested by other reviewers. I also used penne pasta since I didn't have egg noodles on hand. My husband said there wasn't enough cheese. The flavor was kind of bland. Couldn't give this recipe a rave review. It was just alright.

Baked Tilapia

Reviewed: Apr. 5, 2007
This dish was okay. It was my first time making tilapia. The fish is meaty and delicious. I followed other's suggestions and marinated in italian dressing. But I really didn't care for the the combination of tomatoes and green peppers with the fish. My husband pushed all the other ingredients aside and just ate the fish. Won't be making this dish again.

Chinese Chicken Fried Rice I

Reviewed: Apr. 5, 2007
Great recipe! I omitted the celery and carrots. Be sure you use Jasmine rice. It enhances the flavor of the dish. I also added a tablespoon of butter with a little bit of oil. The oil prevents the butter from burning, where the butter adds richness. And you don't have to use just chicken. My first try, I used chicken. The second time, I cooked up some Spam and cubed them up. It was yummy! My mother uses chinese sausauge (found at your local Asian food market). Thanks for a great recipe.

Fruity Curry Chicken Salad

Reviewed: Apr. 5, 2007
Fantastic dish! I was hesitant at first making this recipe. Curry and fruit in my chicken salad sounded weird. I was so mistaken. The curry really enhances the flavor. I was too lazy to cook chicken, so I bought a rotisseire chicken from my grocery store. I took the skin off and cut the meat up in cubes. I also added red onions and used 2 stalks of celery. Fast and easy! Thanks for a great recipe.

Slow Cooker Pork Chops II

Reviewed: Apr. 9, 2006
Delicious! I used 4 bone in pork chops, hoping that the bone would help keep the moisture and not dry it out. I also used a whole can of chicken broth and cooked on low heat. YUMMY! The combination of herbs sounded weird at first, but tasted great. I would definitely recommend!

My boyfriend and I had a great time making X-mas decorations. The only thing was that the dough puffed up. We used christmas cookie cut outs which turned out really well. We used acrylic paint and shalacked them afterwards.
