About this Cook
I love food and entertaining. My friends call me "The Hostess". Desserts are my favorites to make, although they never turn out looking like the picture. I love experimenting and have a wonderful husband who is always willing to try anything I create, regardless of how scary it looks!
My favorite things to cook
Growing up, my father was the main cook. He would take hours in the kitchen preparing diverse Vietnamese and Chinese dishes. Now that I'm older, I don't cook these dishes since they take longer then I have time for, so the 30 minute meals and the slow cooker are more my style. I always make sure to go home every once in a while to make special requests from Dad though!
My favorite family cooking traditions
My sister and I have a holiday cooking party every year with our childhood girlfriend. The 3 of us get a chance to make some tasty holiday cookies and cakes and spend time laughing and catching up. We usually have a recipe theme, like coffee desserts, or favorite peanut butter recipe, etc. It's really special to me because sometimes you get so caught up in "life" you forget to slow down to just enjoy the moment of being.
My cooking triumphs
The first time I was responsible for cooking Thanksgiving dinner for my family. Mom and Dad didn't even have to help. It was stressful, but it turned out great and I didn't burn the bird!
My cooking tragedies
My sister and I were making a coffee dessert during one of our holiday cooking party. Needless to say, it didn't turn out looking like the picture. It was horrendous! My husband loved it though. I couldn't stand looking at it and threw it out! He wasn't happy and always reminds me not to throw any of our creations out.

Charleston Breakfast Casserole
Followed recipe exactly, but took advice of other readers and used "seasoned" croutons and add some shredded parmesan cheese. Turned out really good. Made it for a Sunday brunch with some friends and everyone really enjoyed it. I ate leftovers the next day, and didn't enjoy it as much though.

Sturdy Whipped Cream Frosting
I needed a frosting for cupcakes for my 2 yr old and her friends. Thought this would be a good recipe since it didn't have too much sugar. I didn't really care for it, tasted too much like cream cheese. I added another 1/4 cup sugar which helped, but the frosting didn't hold up as well as I'd like. The warm kitchen kind of flattened the frosting out. My friends seemed to like it, but I don't think I'll be using this again.

Chicken Tortilla Soup V
This was delicious! It came out better then I expected. As suggested by other reviewers, I added black beans, a bell pepper, spicy corn and black bean salsa and used a chicken roaster from the supermarket. Fast and easy. It actually came out more like a stew because the liquid was soaked up by all the ingredients. YUMMO
