Asparagus, Chicken, and Pecan Pasta

Reviewed: Jul. 19, 2008
This was very easy and very good. I woud alter next time in a couple of ways - a little red pepper flakes and I would substitute pine nuts for the pecans. The pecans were interesting but pine nuts seem better suited to the dish.

Firecracker Grilled Alaska Salmon

Reviewed: Jul. 7, 2007
Really very good. Easy to prepare but special enough for guests. I used sesame oil instead of peanut, toasted sesame instead of the sesame oil and fresh ginger instead of powdered. It could have been a little spicier and still been very good. Although as prepared it was good for most palates.

Grilled Garlic Artichokes

Reviewed: Jul. 9, 2006
Very good. Even my kids enjoyed it. Recipe didn't mention removing the chokes before grilling - which I did. They needed a bit more salt but were tasty even without using the additional dipping sauce.

Thai Chicken Burgers

Really good. Burgers were grilled and enjoyed at a cook out. Burgers were slightly dry - always a challenge with ground chicken.

Cha Cha's White Chicken Chili

Reviewed: Feb. 12, 2006
Very very good and very simple. I added about a 1/2 cup of salsa verde and served with sour cream. It was a hit with everyone. I also used chicken thighs - cheaper and really good with recipes such as this.

Creamy Hot Chocolate

Kids loved it. Made a lot so I served it to all the kids that gathered in my yard this snowy day. I did use skim milk instead of water.

Beef Barley Vegetable Soup

Reviewed: Feb. 12, 2006
This was really easy and very good. I made the roast as directed - dry in the crock pot. The meat was very tender and I was able to cut it into small cubes which I prefer for soups. I followed the recipe except I added 1 cup of red wine and Better Than Bouillon Beef Base. I also didn't add the barley back to the pot until right before serving. Makes a lot - flavor was rich and wonderful. Will make again.

Old Fashioned Sicilian Succo

Reviewed: Dec. 24, 2005
Grown ups love this, kids love this. My italian husband said it was most like his grandmother's recipe. Really simple sauce no chunks to prevent children or picky adults from eating. Makes a mountain of meatballs and sauce. Leftovers are awesome, will be trying some as suggested in lasagna today.

Awesome Slow Cooker Pot Roast

Reviewed: Dec. 24, 2005
Very good. The whole family enjoyed this meal. Super simple. I did as suggested by other reviewers and strained the gravy. I then thickened it with a little corn starch. Everyone enjoyed the meal and I fed 4 adults and 4 children with it.

Slow Cooker Taco Soup

Reviewed: Dec. 24, 2005
This soup was very easy and was really enjoyed. When preparing I accidently left out the 2 cups of water - when I went to put it in several hours later I decided not to. I think it might have made the soup to thin for my family. I substititued on can of the diced tomatoes for one can of rotel tomatoes with green chilis for just the right spice.
