Super Summer Kale Salad

This is an excellent kale salad. I've made it a couple times now and it has been a hit for potlucks. I agree with other reviewer suggestions to cut the sugar and make the salad at least a couple hours ahead of when you're planning to eat it so that the kale softens. Good stuff.

Creamy Corn Chowder

Fantastic recipe. I made similar changes to others who didn't peel the potatoes (mine were organic) and sauteed the onions ahead of time. My corn and bell pepper strips were frozen, but the soup still turned out amazingly. I will definitely make this again.

Fresh Blueberry Pie II

This was a fantastic pie, especially given how simple it is to make. I appreciate that it has few and basic ingredients. I followed the recipe exactly. We had guests over for dinner, and the four of us finished off the entire pie. I will make it again tomorrow!

Peanut Butter Noodles

Really easy and tasty recipe. I used egg noodles because that's what I had in the pantry, and added carrots, broccoli, and extra firm tofu. I was very happy with the amount of garlic in the dish, but could see how people who aren't so into garlic might be offended. Husband said he would recommend the dish to a friend.

Easy Vegetable Pot Pie

Really easy and tasty, and I didn't even have a regular pie crust (flour tortillas can substitute). Agree with the other reviewers that the pepper is a bit much. I will cut back on it next time.

Baked Kale Chips

I, too, was skeptical. After all, I'm not the biggest fan of kale, although I try to eat it from time to time because I believe it's super good for you. The chips are a great idea. They are quick and easy to prepare, and I enjoyed eating them. Thanks for sharing!

Oatmeal Chocolate Chip Cookies I

This recipe was quick and fantastically easy to do, but the cookies came out tasting wonderful. The cooking time was perfect -- just be careful to leave enough space between the cookies, as they spread out quite a bit. An inch and a half was not enough for mine. ;)

Garbanzo Tomato Pasta Soup

Very good and easy recipe. Used vegetable boullion cubes instead of vegetable broth. I didn't follow the proportions all that closely, but still ended up with a great-tasting meal.

Vegetarian Tortilla Soup

Good soup to start with, and much better after it had been left to sit in the freezer for a couple days. We reheated and had some just today. I added a can of black beans as other reviewers had suggested, and just today put in additional pinto beans that were on hand. We also prefer putting tortilla chips on the top and whilst eating, so that you get the added crunchiness in additional to the tortilla taste.

Krissy's Best Ever Corn Muffins

This recipe turned out very well, with little work on my part. Following suggestions from others, I did reduce the amount of sugar in the recipe (to 1/4c). I also cut back slightly on the honey. Used a whole cup of corn. Last year I made corn muffins with yellow corn -- probably little difference, but they looked prettier than the white corn I had sitting around this year.

Classic Macaroni and Cheese

I didn't read other reviews before trying this recipe, but I wish I had because my dish ended up a little too dry as other said. Reheating I add some water and cover, and it seems to be okay. The virtue in this recipe is mostly that there are so few ingredients and that it is really easy to follow. It's nothing gourmet, but classic and very quick to do. I will definitely make this again.

Cheryl's Spinach Cheesy Pasta Casserole

This turned out to be relatively quick to prepare and tasted really good. I managed to get by with about half as much of the pasta sauce. We didn't have breadcrumbs on hand, but the same amount of crushed crackers (Triscuits) seemed to do the trick. Great to take to school in a tupperware to heat up for lunch.

Pudding No-Bake Oatmeal Cookies

A very good recipe considering it's so quick and easy. i halved the recipe and added unsweetened cocoa powder since other reviewers seemed to indicate that their cookies turned out very sweet and liked the cocoa version of this. My cookies seemed to set just fine, but I used as much oatmeal as seemed necessary in order to make the cookies form more solidly. Towards the end I rolled up sunflower seeds in the cookies, and my roommate like the seeded ones even better. edit: i decided i wanted the cookies to be less sticky, so I smushed the cookies into a cookie-like shape (flatter) and baked the no-bake cookies for about 15 min. at 400 deg. Crunchy outside - chewy inside. Even better! Perhaps defeating the purpose, but tasty nonetheless.

Nutty Crispy Sugar Cookies

I was looking for a cookie to use as a base for matcha green tea cookies. These cookies are good, but not quite 'crispy' in the way one generally thinks of cookies as being crispy. They came out a bit sandy for me, as some other reviewers have mentioned. Relatively easy to put together and I got 48 cookies halving the recipe.

Double Layer Pumpkin Pie

I didn't wait long enough for the bottom layer to set before pouring in the pumpkin mix :/, so my pie didn't look anything like the picture. But the pie did taste fantastic, regardless of what it looked like. Lots of compliments from everyone at Thanksgiving dinner. They appreciated the change from the traditional pie.

Easy Sugar Cookies

Decent, easy recipe, but I agree with others that the cookies come out a bit on the dry side. So they are better with a glass of milk. ;) I took some of my batch and mixed in some strawerry preserves for sugar, and this made the cookies a little more chewy/moist and gave them a pretty swirl.
