Hearty Vegetable Lasagna

So good! My husband and all of our friends love this recipe and it is so easy. I used two zuchinni's, 10 oz mushrooms and an onion. I also used no boil noodles to cut down on time. So easy and definitely a keeper for us. I plan on making a large batch and will freeze family sized portions to pop in the oven.

Chicken Tikka Masala

I've tried several chicken tikka masala recipes and have always been disappointed. This recipe is very good and the closest you can come to the authentic restaurant taste, and it's so easy to make. I used non-fat fage greek yogurt and marinated for a few hours in the fridge. Next time I want to take some of the other reviewer advice and use garam masala instead of the cinnamon. I also broiled the chicken in the oven for approx 9 minutes. Overall a really excellent recipe that will satisfy that craving for Indian food.

Spinach-And-Berries Salad With Non-Fat Curry Dressing

The curry dressing is excellent! It tastes great on salad as well as a dipping sauce for veggies. I've even used it as a marinade. A very refreshing and healthy salad for the summer.

Barbecued Beef

I cooked the meat with a few cups of vegetable stock and one chopped onion. I mixed the sauce separately, drained the onion/stock mixture and added the sauce to the meat for about a half hour before serving. I wasn't a huge fan but my family raved about it and there were no leftovers! The sauce is very tangy so if you prefer something a little sweeter or low key I'd suggest mixing in your favorite bottled bbq sauce. Overall the meat was very tender, the sauce was just a little overpowering for my taste.

Tomato Bisque III

This is one of the best soups I've ever had and my husband loved it as well. Perfect for those chilly days when you want something to help warm you up. The nutmeg and fire roasted tomatoes definitely make this recipe.

Italian Spaghetti Sauce with Meatballs

Awesome! Used the butcher's blend of pork, veal and ground beef I found at the market for the meatballs instead of straight ground beef. Also didn't add the tomato paste to get more of an al fresco taste to the sauce. Everyone loved it! Even my fiance who is Italian.

Garlic Cheddar Chicken

Easier Chicken Marsala

Tofu and Veggies in Peanut Sauce

Very yummy. I used red bell pepper and a small onion for the veggies, and about 1/4 to 1/3 cup of extra chunky peanut butter. SO good over Jasmine Rice. Definitely a keeper.

My Canadian Friend's Bean Soup

Pumpkin Bread IV

This is a large recipe. I was able to use 4 of the smaller disposable loaf pans and give them away to neighbors for the holidays. The bread is EXCEPTIONAL. Very moist and tasty. Awesome!

Six Can Chicken Tortilla Soup

Brown Sugar Meatloaf

I have never liked meatloaf but this was amazing. I substitued onion powder since my boyfriend isn't a fan of veggies (and a VERY picky eater) and he loved it. The meatloaf is very moist and the spices and brown sugar sauce give it a great taste. You won't be disappointed!
