Linda's Lasagna

I have become famous for making this lasagna. It really is a fabulous recipe. One thing to note, though, is that cottage cheese will not work for lasagna -- you need to get the 15-oz. container of WHOLE MILK ricotta. Also, a good idea is to bake it for the 30 minutes the night before, keep it in the refrigerator, and the next day, sprinkle the 1/2 pound of mozz on top and then bake for 15 minutes before serving. That way, the flavors gel overnight, but you still get the feeling of eating the lasagna "fresh".

Almond Meringue Cookies

The group I made these for absolutely loved them. I thought they needed to be sweeter, and there was something about the texture that just did not appeal to me. I would make these again if requested, or pass on the recipe, but I myself was not too keen on them. (It's also a very expensive recipe to make with the high cost of almonds!)

I used the leeks, about four golden potatoes (which is maybe more than a pound) and substituted 1/2 & 1/2 for the milk. This recipe was PERFECT! My family absolutely loved it and I will definitely make it again. We do have a few leftovers from St. Patrick's Day but I'm going to use them to make a kind of boxty. Yum! Great recipe!!

Irish Soda Bread Cookies

I omitted the currants and caraway seed, and instead of rolling out the dough, I made teaspoon-ful drop cookies, and flattened them out with my hand. (Also needed to use about 1/3 a cup of milk, not 1/4 as the recipe calls for.) My family ate them up last night and I will be making another batch tonight! THANK YOU for such a wonderful recipe! I'd give it 6 stars if I could.

Almond Butter Cookies

My mom and dad loved these, but I thought they were way too "thick" -- tasted like eating crunchy marzipan. I was glad they gobbled 'em up cuz I sure didn't enjoy them!
