Italian Anise Toast

I was a bit skeptical in making these at Christmas. My family is big into fudge and chocolate. I was afraid these would be too subtle. But they were a huge hit with everyone, and I couldn't keep my hands off them either. Great with tea, too mild for coffee. My fiance loved the first batch that came out and ended up making all the batches after that. Very easy recipe if he can do it. I made four batches in all, and didn't have one left by Dec. 26th.

Gooey Butter Cookies

My boyfriend called right after I taste-tested one of these cookies. I told him that they were devil cookies - positively sinfully yummy. I rolled them in red decorator's sugar instead of powdered sugar, because I wanted them to be festive. I plan on making lemon ones rolled in green sugar at some point too. Since they are cake-like cookies, I tested for doneness the old fashioned way - with a toothpick. It worked for me, since my oven is a bit tempermental.

Pizzelles II

These were the best I've ever made. The thicker batter was perfect in my pizzelle baker that tends to make the cookies very thin. Light crispy and perfect with coffee or tea. Can't stop eating them!

Winter Fruit Compote

I cut back a bit on the sugar added, as most dried fruits have extra sugar in them to start with. Making this compote made the whole house smell wonderful. I served it with a fresh pound cake, and dollop of whipped cream...rave reviews!

Quick Mix Spritz

I'm not usually a big fan of Spritz cookies. Most are pasty and lack impact. This version was not like that at all! The flavor out of the oven was fantastic and two days later they were crispy yet buttery and lovely with coffee or tea. I used butter flavored shortening, which I believe made a huge difference. Taste aside, I still don't like cookie presses - pan in the butt to clean and very fussy.

Golden Yam Brownies

I bought a new baking pan that's like a muffin tin only the cups are square. I made this recipe to try out the new pan. It was awesome! I added one extra egg, because it was lonely in there by itself. I was a bit concerned that the batter was very loose and you could see small butter specks. Cooked up wonderful and dense. Everyone loved it. I did not glaze, but put a pecan struesel on top before baking - YUM!

Lower Fat Banana Bread I

My boyfriend loved this bread! I used 1 cup flour and 2/3 cup whole wheat flour, and the bread turned out denser and heartier than most quick breads, and has the perfect amount of sweetness. I also sprinkled the top with chopped walnuts before baking...adds a nice crunch.

Fantastic Black Bean Chili

Not everybody has the same taste buds, so I had to mess around with the seasoning...I also added twice as many tomatoes. But it seems that no matter what I add or don't add...this recipe comes out yummy! And it's some of the fastest chili to make. Just love it with Jiffy Corn Muffins and cheddar cheese.

Russian Tea Cakes I

This is the same recipe my Grandma has been making for years, with one exception - she uses maple extract instead of vanilla. I've had them both ways and like the maple better myself, but others not so keen on maple flavors of course like the vanilla. Almond extract is also pretty good if you only have almonds in your pantry. These are my favorite cookies of the season - addictive and simple.

Cranberry Hootycreeks

My Town has Black Walnut Festival coming up and I was put in charge of filling gift baskets for raffle. I found this recipe for a cookie in a jar mix and though, mmm, I could substitute Black Walnuts for the Pecans. So I did. When I made the test batch, they were AWESOME!! Alot of people don't like black walnuts, but in these cookies, their taste is nicely complemented by the sweet/sour of the cranberries and the creaminess of the white chocolate. I plan on making up a whole bunch of these for Christmas for my Family, not sure if I'll still use the black walnuts (they are hard to find and much more expensive), but I have ever confidence they will be awesome no matter what nuts I use!!

Blueberry Clafouti

I made this with fresh pitted and halved cherries (more traditional). It was heavy in texture but light and refreshing in flavor. Great the next day cold with a hot cup of coffee.

Potato Leek Soup I

Slow Cooker Marmalade Curry Chicken

This was good. A great change of pace from what I usually make in the slow cooker. However, I didn't find the slowcooker to be a benefit. I made something very similar and just as good in 15 minutes on the stove.
