Chex® Muddy Buddies®

This stuff is awesome! When CHEX came out with their Chocolate-Peanut Butter CHEX-Mix, I thought of this recipe imediately. One week later I combined Muddy-Buddies with honey roasted peanuts, peanut butter M&M's, and tiny pretzels, and made my own Chocolate-Peanut Butter CHEX-Mix. Yummy!

Thirst Quenching Lemonade

A bit sweet for me, so I added more lemon juice and water. Doesn't make much, but if you find yourself with 4-5 lemons and want to use them up before it's too late, this is a good recipe.

Cranberry Hootycreeks

My Town has Black Walnut Festival coming up and I was put in charge of filling gift baskets for raffle. I found this recipe for a cookie in a jar mix and though, mmm, I could substitute Black Walnuts for the Pecans. So I did. When I made the test batch, they were AWESOME!! Alot of people don't like black walnuts, but in these cookies, their taste is nicely complemented by the sweet/sour of the cranberries and the creaminess of the white chocolate. I plan on making up a whole bunch of these for Christmas for my Family, not sure if I'll still use the black walnuts (they are hard to find and much more expensive), but I have ever confidence they will be awesome no matter what nuts I use!!

Russian Tea Cakes I

This is the same recipe my Grandma has been making for years, with one exception - she uses maple extract instead of vanilla. I've had them both ways and like the maple better myself, but others not so keen on maple flavors of course like the vanilla. Almond extract is also pretty good if you only have almonds in your pantry. These are my favorite cookies of the season - addictive and simple.

Fantastic Black Bean Chili

Not everybody has the same taste buds, so I had to mess around with the seasoning...I also added twice as many tomatoes. But it seems that no matter what I add or don't add...this recipe comes out yummy! And it's some of the fastest chili to make. Just love it with Jiffy Corn Muffins and cheddar cheese.

Carrot Bread

My future Mother-in-law loved this! So scored some points for me, but not with me. It was very moist, and tasted almost like carrot cake...a bit sweet, even without raisins.

Anise Seed Borrachio Cookies

These tasted great and melted in your mouth. But they were not pretty to look at and very crumbly in texture. The cookies fell apart very easyily, so they were difficult to store or present on a cookie tray. I think that rolling them out thicker would be better. Or, since the dough was so sticky, maybe skip the whole rolling the dough out part and just make them into balls and flatten a bit with a fork or a glass.

Apple Butter Pork Loin

Not the easiest of clean up...but man was it worth it! Sweet and succulent pork, spiced just right! Great the next day as a pulled pork sandwhich. Difficult to figure out what to serve with a meat dish that is so sweet though.

Lower Fat Banana Bread I

My boyfriend loved this bread! I used 1 cup flour and 2/3 cup whole wheat flour, and the bread turned out denser and heartier than most quick breads, and has the perfect amount of sweetness. I also sprinkled the top with chopped walnuts before baking...adds a nice crunch.

Spiced Butternut Squash Muffins

Butternut just doesn't stand up to baking. The flavor is totally lost. I made these with half white and half whole wheat flour, as I normally do for muffins and quick breads. The spice was at a good level for a muffin, but that's all they tasted like were spiced muffins. The centers also were still kind of gummy, even though the edges were starting to blacken.

Chocolate Rum Cake

Not quite as good as the original version. It was still very good though, I made mine with black rum, figured the chocolate could handle the deeper molases flavor. Maybe would have been better with gold rum.

Winter Fruit Compote

I cut back a bit on the sugar added, as most dried fruits have extra sugar in them to start with. Making this compote made the whole house smell wonderful. I served it with a fresh pound cake, and dollop of whipped cream...rave reviews!

Marzetti® Coconut Breaded Chicken with Crunchy Fruit Sauce

The sauce was good, but the coconut breading needed help...it just didn't tast like coconut. Maybe instead of dipping the chicken in the dressing, it should have been dipped in coconut milk, to enhance the flavor.

Gooey Butter Cookies

My boyfriend called right after I taste-tested one of these cookies. I told him that they were devil cookies - positively sinfully yummy. I rolled them in red decorator's sugar instead of powdered sugar, because I wanted them to be festive. I plan on making lemon ones rolled in green sugar at some point too. Since they are cake-like cookies, I tested for doneness the old fashioned way - with a toothpick. It worked for me, since my oven is a bit tempermental.

Fresh Ginger Cookies

I substituted 1/2 cup Splenda and 1/2 cup sugar instead of all the sugar. They stayed in mound shapes and were a tiny bit dry...a good coffee or tea cookie. I liked the balance between molasses and ginger. You could taste both, but neither were overwhelming. A wonderful mildly sweet addition to the cookie tin.

Italian Anise Toast

I was a bit skeptical in making these at Christmas. My family is big into fudge and chocolate. I was afraid these would be too subtle. But they were a huge hit with everyone, and I couldn't keep my hands off them either. Great with tea, too mild for coffee. My fiance loved the first batch that came out and ended up making all the batches after that. Very easy recipe if he can do it. I made four batches in all, and didn't have one left by Dec. 26th.

Mine turned out a bit dry. I did use half whole wheat flour, maybe that was one of the reasons. Otherwise, I thought it had wonderful flavor.
