Stuffed Peppers with Turkey and Vegetables

The stuffing is excellent. I stuck to the recipe except for omitting the yellow and red peppers because I didn't have any. I didn't love eating the pepper shell, but that is just my issue. My husband finished his and one of the children's!

Fast and Simple Salsa

This salsa has gotten me rave reviews. I add a bunch of cilantro, juice of one lime and 2 roasted small green chiles. I think the vinegar is the secret ingredient.

Blueberry Zucchini Bread

Wish there were 6 stars for this recipe! I used 3 cups of zucchini and one defrosted bag of blueberries as well as using 1/4 cup of brown sugar and 2 cups of white sugar. A big hit.

Basil Tomato Soup

Used 3lbs of ripe fresh tomatoes and 2 cups of homemade chicken broth. Didn't have fresh basil, so I used about 1/8 cup of dried basil. We enjoyed it and will make it again.

Yellow Cake

I felt like I had to review this recipe since it got several bad reviews. It is not a cake your going to make for a fancy party, but it is quite good. I have just moved and don't have a mixer yet and it only requires simple ingredients. My children and a neighbor have like it so far. It reminds me of a simple cake from my childhood.

Broiled Halibut with Goat Cheese Crust

Excellent with tilapia. Used salt and pepper rather than lemon pepper. I made the sauce even though I thought it would be too rich. I'm glad I did, it was great.

Carrot Souffle

Wow! I don't even like carrots, but this was fantastic. I had some leftover carrots in the fridge and needed to use them up. I made half a recipe without difficulty. I used half brown and half white sugar and used less than half the amount called for. Four ramikens full cooked in a 350 degree oven for 45 minutes. I will be making this for the next family getogether.
