Jalapeno Pepper Appetizers

What to do with an overabundance of jalapenos from the garden? Why, make these appetizers. The pepper's heat gets toned down by the cream cheese. So easy! So tasty! My kids love 'em!

Bite-Sized Salmon Tikka

My son and I both liked this dish. However it could have used more spice, especially more hot spice -- it was much blander than I thought it would be. But I never would have thought to cut salmon into small chunks and fry, and that actually was an easy way to prepare this dish -- and fast!

Rhubarb Cheesecake

What a nice combination of flavors, the tartness of the rhubarb, the smoothness of the cheesecake. I added strawberries to the rhubarb too, and it just disappeared at my house in no time. Big hit!

Cajun Style Meatloaf

This was a big hit with my kids, who as a general rule don't even like meatloaf. "It's got a nice zip" as one of my sons said. Three of us ate it all up in 2 meals. I used chorizo instead of andouille sausage (chopped it in the blender first) and cut back a little on the hot sauce, maybe a teaspoon instead of a tablespoon. It was plenty hot though. If you like hot foods, this recipe is very tasty!

Chocolate Cobbler

I used to make an easy recipe when I was a kid, and the last step was to pour hot water over everything, and the end result was a cakey treat with thick fudge on the bottom. I thought this was that recipe, but it's not. This recipe makes something with a lot of runny chocolate sauce on the bottom with a little cake floating on top. Tasted okay, maybe a little rich -- perhaps too much butter -- don't know precisely but I'll keep lookin' for that recipe from my childhood.

Annie's Fruit Salsa and Cinnamon Chips

Everybody in the office loved it. It does take a bit of time to prepare (all that washing, chopping, etc.) but it looks great, tastes great and is pretty healthy to boot. Someone suggested putting the cut-up tortillas in a bag of cinnamon sugar and shaking to coat. I did it that way and the chips had way too much coating -- the cinnamon stuck, and the sugar didn't so the cinnamon flavor was overpowering . So I prefer to prepare the chips the way the recipe says.

Blueberry Gingerbread

I had last year's blueberries in the freezer and I needed to use them up and this was an excellent method for doing that -- the gingerbread drew rave reviews at the office, and when I took it to a friend's house for dinner, and my kids loved it too. It's a good idea to cover lightly to keep the top crunchy. Wonderful served with whipped cream.

Chocolate Zucchini Bars

I had some zucchini given to me by a gardening friend -- what to do? My kids hate zucchini! So I made these, and despite the fact that I didn't manage to whip it up before my son caught me in the act of adding green stuff to the batter ("Mom, what IS that in there?"), they really liked these cake-like brownies.

Zucchini Wrapped in Tortillas

This recipe had a mild curry flavor -- I was expecting mexican! -- still I liked it. Pretty easy to make, and one of my two kids liked it as well. (I was looking for ways to cook zucchini so my kids would eat it.)
