Ham and Pineapple Kabobs

Reviewed: Apr. 10, 2007
I made this for Easter dinner (wanted ham but don't really care for the traditional way) and it was a big hit! I doubled the recipe and marinaded the ham in the mixture for about 4 hours ahead of time. Served over brown rice and it was a great light meal. thanks!!

Slow Cooker Chicken Stroganoff

Reviewed: Jun. 29, 2011
This is SO good and SO easy. I throw the chicken in whole and frozen with the butter and seasoning and it's ready to shred after 4-5 hrs on low. A huge hit in my house!

Wine Soaked Mushrooms

Reviewed: Apr. 23, 2007
YUM!!! I didn't have a ton of time so I took other reviewers advice and used only 1c wine/ 1c broth. It only took a little longer than the steaks on the grill. Can't wait to make this one for company!

Blue Cheese, Bacon and Chive Stuffed Pork Chops

Reviewed: Apr. 30, 2007
This was a big hit at dinner with the parents last night! I substituted feta for the bleu cheese per my preference. I also made a pocket to stuff rather than butterflying - I think it's easier! This is definitely a new addition to my rotation!

Stuffed Peppers My Way

Reviewed: May 18, 2007
These are fantastic! A great vegetarian main dish, or side dish for meat. My peppers were smaller so they were ready to pull at 20 minutes - you just have to watch them. I also used what I had - brown rice instead of Arborio, and half a can of diced tomatoes instead of fresh - it worked great. I think the stuffing alone would make a good side dish too! So yummy...

Grilled Shrimp Scampi

Reviewed: May 29, 2007
We thought this was fantastic! I've never been a fan of Scampi because of the whole "drowning in butter" thing but this had great flavor! Very easy and beautiful over brown rice. I used dried parsley because that's what I had but otherwise followed the recipe exactly. There was not one shrimp leftover!

Grilled Lemon Herb Pork Chops

Reviewed: May 31, 2007
Phenomenal! I used all of the ingredients but just eye-balled the quantities as I only had two butterflied chops. We will definitely be using this recipe again and again this summer!

Crunchy Oven Fried Tilapia

Reviewed: Jun. 6, 2007
We loved this! Another tasty way to cook fish is always welcome in my book. I was worried about it being a little bland based on other reviews so I sprinkled a little Old Bay on top before baking - I shouldn't have. It didn't need it. However, we did prefer it with tarter sauce but we love our condiments. Next time I will make exactly as the recipe says!

Deli-Style Pasta Salad

Reviewed: Jun. 15, 2007
We've been making this pasta salad for years. You can use whatever veggies or pasta you have on hand (we usually use linguine) and it's easy to scale to the amount of people you're serving. Just use the Italian dressing and Salad Supreme to taste. Thanks for sharing!

Blackberry and Blueberry Pie

Reviewed: Jun. 20, 2007
This pie turned out perfectly!!! This was my first attempt at a fruit pie and even my mother (who is the family expert on them) was impressed. I used the Pillsbury refrigerated crust and made the lattice top - tasty, pretty and easy!

Grilled Fish Steaks

Reviewed: Jul. 6, 2007
This recipe is phenominal! I used fresh basil because I had some on hand and about half the oil. The end result was a light but flavorful fish that my husband and I devoured. Thank you!

California Chicken Spaghetti

Reviewed: Aug. 8, 2007
Wow wow wow! What a great combination of flavors! I was short on time so I used a can of diced tomatoes with garlic and basil already in it (worked like a charm - probably will do that next time :) Also added some chopped artichokes per a friend's suggestion - that was great too. Lovely, can't wait to make again!

Bruschetta with Roasted Sweet Red Peppers

Reviewed: Sep. 11, 2007
If you go for the jar of peppers, don't be afraid to use the whole thing! It seemed like a ton so I just added half, then mixed in a little more, then a little more... ended up using the whole thing. Next time I will do the roasted peppers myself but this time I ran out of time. Great appetizer in a pinch!! Definitely sprinkle with grated Parm :)

Sunshine Toast

It's funny to read the reviews and get all the different names people have called this over the years. Ours was "One-Eyed Jacks" - an all-time favorite!

Gypsy Soup

Reviewed: Jan. 21, 2008
Definitely double the stock. I skipped the saute step and just put all ingredients in the crock pot on low for 8 or so hours. The house smelled wonderful and the soup was a huge hit with our guests. I doubled the sweet potato just because we enjoy it so much. I subbed soy sauce for tamari and left out the turmeric because I didn't have any. Easy and so satisfying on a cold January night!

Spaghetti Carbonara II

Reviewed: Mar. 31, 2008
This dish is awesome!! I followed advice of previous reviewers and mixed the egg and cheese first before adding. I also added a drained can of diced tomatoes to try to get SOME nutrition in there :) But it was so tasty, my husband says I'm not allowed to tweak it anymore...

Rhubarb Strawberry Crunch

Reviewed: Jul. 6, 2009
I followed all adjustments by TRindell and it turned out perfectly! I used 3/4C sugar and it was just sweet enough. Although I did forget the tip about foil on the bottom of the oven to catch the overflow... that would have been helpful!

Tomato and Mozzarella Bites

Reviewed: Feb. 19, 2010
Very fun and different appetizer! Before making for a party, I tried a few with mozzarella marinaded in the balsamic mixture and a few as written. We definitely preferred the marinaded ones.

Leek Potato Mushroom Cheddar Soup

Reviewed: Sep. 30, 2010
My new favorite soup recipe! I did end up adding salt after serving so I made a note to add some while cooking. Also, there's no way this is 6 servings! Not if it's the main dish anyway... I doubled the recipe and it served 4 (although we all went back for seconds) with not much leftover.

Zesty Slow Cooker Chicken Barbecue

SO good! Very juicy and flavorful. Like other reviewers, I used another vinegar-based salad dressing that I had on hand.
