Slow-Cooker Chicken Tortilla Soup

Amazing soup!! I took advise of other reviewers and added black beans - definitely a good idea. Also tossed in chicken still frozen and shredded about an hour before serving - worked like a charm. Just finished the leftovers yesterday and I can't wait to make again!! Tortilla strips are easier with cooking spray instead of oil and I like to add salt, garlic powder and a little cumin to them before baking.

Gypsy Soup

Definitely double the stock. I skipped the saute step and just put all ingredients in the crock pot on low for 8 or so hours. The house smelled wonderful and the soup was a huge hit with our guests. I doubled the sweet potato just because we enjoy it so much. I subbed soy sauce for tamari and left out the turmeric because I didn't have any. Easy and so satisfying on a cold January night!

Extra Gingery Bread

So so so good! The candied ginger is what did it for me. If you can't find it, don't worry! It's very easy (and cheap) to make. Here's what I did: bring 1 1/3C sugar and 1C water to a boil. Add 1C chopped, peeled ginger and simmer for 20 minutes. Drain, dry and sprinkle with sugar. It's quite strong when eated alone but when baked into this bread, it just adds a super rich flavor and a fun chewy texture.

Spaghetti Carbonara II

This dish is awesome!! I followed advice of previous reviewers and mixed the egg and cheese first before adding. I also added a drained can of diced tomatoes to try to get SOME nutrition in there :) But it was so tasty, my husband says I'm not allowed to tweak it anymore...

Spicy Pumpkin and Sweet Potato Soup

I thought this recipe was okay... I liked the "spice rub" idea and the flavor was great but I couldn't get the consistency to come out right. I put it back into the food processor twice to get it creamier with no luck. I added cream and that helped, but not nearly as healthy! I may keep working on it, but not our favorite as it is right now.

Easy Granola Bars

I will never buy store-bought granola bars again! My husband and I love trail mix so raisins, peanuts and mini M&M's were the perfect combo. I added 1/3 cup wheat germ for added texture/crunch. Yum!

Bruschetta with Roasted Sweet Red Peppers

If you go for the jar of peppers, don't be afraid to use the whole thing! It seemed like a ton so I just added half, then mixed in a little more, then a little more... ended up using the whole thing. Next time I will do the roasted peppers myself but this time I ran out of time. Great appetizer in a pinch!! Definitely sprinkle with grated Parm :)

Deli-Style Pasta Salad

We've been making this pasta salad for years. You can use whatever veggies or pasta you have on hand (we usually use linguine) and it's easy to scale to the amount of people you're serving. Just use the Italian dressing and Salad Supreme to taste. Thanks for sharing!

Blackberry and Blueberry Pie

This pie turned out perfectly!!! This was my first attempt at a fruit pie and even my mother (who is the family expert on them) was impressed. I used the Pillsbury refrigerated crust and made the lattice top - tasty, pretty and easy!

Grilled Shrimp Scampi

We thought this was fantastic! I've never been a fan of Scampi because of the whole "drowning in butter" thing but this had great flavor! Very easy and beautiful over brown rice. I used dried parsley because that's what I had but otherwise followed the recipe exactly. There was not one shrimp leftover!

Grandma Johnson's Scones

I've made these a few times but last time I forgot to add the butter (just missed that step) and although the dough was hard to get together, they still turned out tasty! A bit more crumbly than the original, but I think I'll cut the butter way down from now on, to maybe half a stick.

Chicken Souvlaki Gyro Style

So good! This was a huge hit at our house. I couldn't find Greek Seasoning at the store so I used equal parts basil, oregano and thyme (should have used marjoram too but didn't have any). The tzatziki sauce definitely makes it. Like another reviewer said, definitely buy good pitas. I warm them up in the microwave wrapped in damp paper towels to keep the pliable.

Pumpkin Soup

My favorite soup recipe so far this season! It's definitely easier to just roast the pumpkin in halves with the skin on, then scoop out the flesh later. My husband isn't a big fan of nutmeg so I used cumin instead (as another reviewer suggested) and it was the perfect mix of savory and sweet. I will definitely make again.

Tomato and Mozzarella Bites

Very fun and different appetizer! Before making for a party, I tried a few with mozzarella marinaded in the balsamic mixture and a few as written. We definitely preferred the marinaded ones.

Orange-Glazed Chicken Wings

These were okay. I upped the OJ and only used a cup of soy sauce per other user's suggestion. I was hoping for a good orange-y flavor but they were just bland. Very tender but so-so flavor.

I took this to an Irish-theme dinner party on Friday and it was a hit, with some tweaks: I used 6 strips of bacon, with an additional 2 strips to crumble on top. Added 2T minced garlic towards end of onion/cabbage step. Definitely use a lid to cook onion/cabbage or cabbage stays too crunchy before it starts to brown. Added 1/2C light sour cream when mashing potatoes. Garnished with chives. Without these changes, even with plenty of salt, this was a little bland. But with them, it was delish!

Creamy Dill Cucumber Toasties

We LOVE these tasty treats! I like to use the "zesty" Italian dressing mix for an extra zing. Also, the spread definitely comes together best if you let it sit for a few hours, even overnight. Helps to blend the flavors more evenly.

Annie's Fruit Salsa and Cinnamon Chips

AWESOME! I took other reviewers' advice and left out the extra sugar from the salsa, but otherwise made this exactly. Chips were delicious and I know I'll use the fruit salsa in many other applications... We love this for dessert. Thanks for the post!

Health Nut Blueberry Muffins

These are GREAT! My husband couldn't even tell that they were healthy. I know I'll be using this as the base recipe for many alternatives... The only thing I didn't have on-hand was buttermilk so I took other reviewers' suggestions and did half light sour cream and half milk. Next time I'll try to use honey or agave as a sugar alternative. Thanks!!!
