Deli-Style Pasta Salad

We've been making this pasta salad for years. You can use whatever veggies or pasta you have on hand (we usually use linguine) and it's easy to scale to the amount of people you're serving. Just use the Italian dressing and Salad Supreme to taste. Thanks for sharing!

Crunchy Oven Fried Tilapia

We loved this! Another tasty way to cook fish is always welcome in my book. I was worried about it being a little bland based on other reviews so I sprinkled a little Old Bay on top before baking - I shouldn't have. It didn't need it. However, we did prefer it with tarter sauce but we love our condiments. Next time I will make exactly as the recipe says!

Grilled Lemon Herb Pork Chops

Phenomenal! I used all of the ingredients but just eye-balled the quantities as I only had two butterflied chops. We will definitely be using this recipe again and again this summer!

Tamra's Lemon Artichoke Pesto

This was just okay for me... I'm usually a fan of strange flavor combinations but not this one. The consistency is nice and works over pasta but I'll keep looking for different pestos. Sorry!

Grilled Shrimp Scampi

We thought this was fantastic! I've never been a fan of Scampi because of the whole "drowning in butter" thing but this had great flavor! Very easy and beautiful over brown rice. I used dried parsley because that's what I had but otherwise followed the recipe exactly. There was not one shrimp leftover!

Peanut Butter Carrot Cookies

I took the advice of other reviewers and cut the white sugar down to 1/2 C and used wheat flour - we didn't think it was sweet enough for us. However I didn't have any chocolate chips so that probably would have helped! I really like the idea of these cookies though, so next time I'll get some dark chocolate and chunk it up to put in there.

Stuffed Peppers My Way

These are fantastic! A great vegetarian main dish, or side dish for meat. My peppers were smaller so they were ready to pull at 20 minutes - you just have to watch them. I also used what I had - brown rice instead of Arborio, and half a can of diced tomatoes instead of fresh - it worked great. I think the stuffing alone would make a good side dish too! So yummy...

Blue Cheese, Bacon and Chive Stuffed Pork Chops

This was a big hit at dinner with the parents last night! I substituted feta for the bleu cheese per my preference. I also made a pocket to stuff rather than butterflying - I think it's easier! This is definitely a new addition to my rotation!

Wine Soaked Mushrooms

YUM!!! I didn't have a ton of time so I took other reviewers advice and used only 1c wine/ 1c broth. It only took a little longer than the steaks on the grill. Can't wait to make this one for company!

Ham and Pineapple Kabobs

I made this for Easter dinner (wanted ham but don't really care for the traditional way) and it was a big hit! I doubled the recipe and marinaded the ham in the mixture for about 4 hours ahead of time. Served over brown rice and it was a great light meal. thanks!!

Cream of Fresh Asparagus Soup II

Pepper Steak

This was fantastic! Just like my Dad used to make... I only had 2 peppers but they were big and I felt that was plenty. Also didn't realize I was out of corn starch until I was halfway through making this, but flour worked just fine. Thanks for bringing home an old favorite for me!!

Artichoke Chicken

Very good - I took the advice of other reviewers and used half mayo and half sour cream. One of my chicken breasts was a little large so I needed to bake a little longer than the recipe called for. Very tasty with pasta!

Annie's Fruit Salsa and Cinnamon Chips

AWESOME! I took other reviewers' advice and left out the extra sugar from the salsa, but otherwise made this exactly. Chips were delicious and I know I'll use the fruit salsa in many other applications... We love this for dessert. Thanks for the post!

Broccoli Cheese Soup III

This is my new favorite broccoli soup recipe! Better than you can get at a restaurant. I pureed about half of the broccoli after cooking it to make it creamier. Also, I accidentally grabbed one can of cream of mushroom soup with the cream of celery and didn't notice until I had already opened it... I used it anyway, it was fine - I may stick with that as my family loves mushrooms :)

Slow-Cooker Chicken Tortilla Soup

Amazing soup!! I took advise of other reviewers and added black beans - definitely a good idea. Also tossed in chicken still frozen and shredded about an hour before serving - worked like a charm. Just finished the leftovers yesterday and I can't wait to make again!! Tortilla strips are easier with cooking spray instead of oil and I like to add salt, garlic powder and a little cumin to them before baking.

Health Nut Blueberry Muffins

These are GREAT! My husband couldn't even tell that they were healthy. I know I'll be using this as the base recipe for many alternatives... The only thing I didn't have on-hand was buttermilk so I took other reviewers' suggestions and did half light sour cream and half milk. Next time I'll try to use honey or agave as a sugar alternative. Thanks!!!

Chinese Cold Pasta Salad

This sauce was PERFECT! I'll never buy Thai peanut sauce again, this is WAY better. I made this a hot dish last night and it was fantastic. I used whatever veggies I had on hand (cabbage, sunchokes, carrots) and it was a big hit. Definitely one for the rotation! Thanks!!!
