Justin's Hoosier Daddy Chili

great recipe!!!! it seems a little strange / not so spectacular when making, but turns out great!!! if yiou like a little meatier add extra 1/2 pound ground beef. and i would cut back on hot spice a tad - though my husband loved, it was a tad too hot for me :)

Alison's Gluten-Free Bread

Wow! Very good! I made without a bread machine. Mixed dry ingredients, then wet ingredients, then combined with each other with a fork. Proofed the yeast in 1/2 cup 100 degree milk with 1tsp sugar for 5 minutes. Then stirred this into the rest. Preheated convection oven to 450 for 30 min, then added pan of water - about 1 inch deep to bottom shelf and put loaves in center rack. Baked at 325 for 25 minutes. (I looked this trick up for bread in a convection oven - we just got one and everything cooks soooo fast and different - nice, but gotta ignore most recipe bake times.) I've never even made regular bread cause I'm afraid of yeast rising, but this turned out well. I let it sit covered on a heating vent for 25 min before baking - it rose a little, but I'm not sure how much it should rise? But turned out great! Oh - I also substituted the following: 1/2 tsp of stevia, no honey. Used 2% milk, no prob. Used 1 cup bobs red mill all purpose baking gluten free baking flour instead of tap and gar flour. Used 1 and 3/4 cup white rice flour - no brown rice flour. Also added 1/4 cup flaxseed meal. I'd say this receipe makes ONE big loaf pan of bread - came out thick, but moist. Could prob easily add bananas or more sugar to make into a cake if wanted :) Thanks!!!!!

Garbanzo Bean Chocolate Cake (Gluten Free!)

awesome! i'm doing a low fructose diet also so i didn't add any of the sugar, just 1/2 tsp of stevia powder, only 3 large eggs and a little extra garbanzo beans - 22oz total in a 10inch sq pan. turned out great!!! however, i have a convection oven and it was a bit dry after only 35 minutes - i'd say 30 MIN MAX in a convection at 350. Thank you CCummins!!!!!

Awesome and Easy Creamy Corn Casserole

ok - this is a great side dish recipe. EASY, quick and cheap. very good for thanksgiving or for a hamburger cookout. i added green onions, but think jalapenos might be better. i doubled recipe and cooked for 65 min in a 9x13 inch pan in a convection oven. let sit 1 hour before serving. would prob be good / the same if cooked ahead of time and then reheated, but should be served hot.

there is a chicken jalapeno version of these on the pillsbury website that i love!!!! i left out the cilantro in that recipe and used canned shredded chicken - yummy. don't refrdigerate well - nothing withe cooked pillsbury dough does :(

Easy Turkey Gravy

very easy and very good!!! i burnt the top of the turkey and the drippings were burnt too so i turned to this recipe. i poured 5 cups of CHICKEN broth into the turkey pan to "change" the flavor to turkey - swished it around, then prepared as directed. i only had a can of chicken gravy so i used that instead of the cream of chicken soup. worked fine. no lumps either!!!! saved my thanksgiving - except for the burn smell throughout the house :( haha

Pleasant Pork Chops

EXCELLENT LOW CARB RECIPE!!!! And I usually don't like pork chops. I followed directions exactly - except used only 4 chops - we like a lot of sauce. We served with side of shredded brussel sprouts fried in a little butter. Would be good with noodles and/or brown rice too.

excellent - my husband's favorite dessert of all time! and pretty easy to make - hard to mess up. we use chocolate pudding. even better the next day if you wanna make in advance - drizzle with choc syrup or chopped nuts on top to make pretty:)

Pineapple Cracker Spread

thank you! my grandmother used to make this but with double the cream cheese, no green peppers, add 3/4 cup chopped walnuts. i'm gonna try with spices others suggested this year, but a great simple dip that reminds me of her :) and it's good on all types of crackers - even chips :)

These are great!!!!! They are very moist and cake like -they are pretty sweet - too much so for my husband, but perfect for me :) Not hard to make either - wait till they cool COMPLETELY before frosting.

Granny Kat's Pumpkin Roll

this tastes great and doesn't require a mixer to make :) try not to spread filling to edges - squeezes out when rolling:( update: i made this roll AND the libby's pumpkin roll recipe from allrecipes today just to see - the cake on this recipe tastes far better - and has a better consistency. might as well make two at a time - a small can of pumpkin is almost 2 cups.

Double Layer Pumpkin Cheesecake

This is very good - and very easy to make. However, I'd only give it a 3 star until to totally cools and has been refrigerated for a day - the texture thickens up a lot and tastes much better. Great for making in advance for turkey day:) Thanks!

Chicken Jambalaya

FANTASTIC LOW CARB RECIPE!!!! and surprisingly simple? I doubled the recipe, used a 10 oz can of diced tomatoes with chilis and a can of chicken broth. Didn't have bay leaf, put in a dash of basil instead. Used one packet of "instant" microwavable brown rice for whole pot. Used double sausage and no shrimp. We all loved it - including a 2.5 yr old!!!!

Awesome Slow Cooker Pot Roast

I have been making a very similar pot roast to this one for many years - the recipe was my aunts. I use only one can of cream of mushroom soup and then up the water to 3 cups. You can also cook the pot roast in a roasting pan in the over for 4 hours at 350 degrees and it turns out great also!!! Sooo easy and moist!!! My very picky husband loves it!

wow. just awesome! and with none of the added sugar or msg or weird junk you find in the packets! i followed EXACTLY times 4 and save in a tupperware container. I also followed GREGSGIRL63 advice and drain oil, add 3 tbsp per lb and then add 1/4ish cup of water - turn to low, mix and let simmer/set for 10-15 min. the water really helps the meat stay tender! thanks for the tip!

i really like this. not everyone loved it, but i don't like egg nog and found this so easy. put it in blender and only added 1/3 gallon of milk... put whole thing in freezer. slushy in 5 hours.

Bob's Awesome Lasagna

stinkin awesome. made beef mixture with 2 lbs g beef and can of drained spinach. soaked noodles like mommyfromseattle reviewer in 2007 said for 20-30 min in hot leftover spaghetti water. combined and MASHED WITH FORK 24 oz cottage cheese and mozzarella and added tsp of nutmeg and 2 eggs. layered 3 times, left in fridge a day then baked 45 min in convection oven. used kroger traditional spaghetti sauce - little sweeter type - kids ages 6, 5 and 3 ate it too :) my mom always uses cottage cheese in hers - this is a million times better and DOES NOT TASTE LIKE COTTAGE CHEESE like hers always does. i think mixing the mozzarrella in and smashing up a little with a fork first helps this though :) thanks bob!
