Roasted Sweet Potatoes & Onions

Oh my, I'm in awe of how good this was. 5 stars+++! I used the suggestion of substituting brown sugar for the amaretto and it was perfect.

Cabbage on the Grill

Tasty, easy way to cook cabbage! I cooked it on my George Foreman indoor grill, I wrapped up the wedges in tinfoil with some olive oil, salt and pepper and laid it on the grill, it sizzled away and was done in 30 minutes. Nice!

Roast Chicken Pita Pockets

I did not add the chili sauce as I didn't have any on hand, and just sprinkled in some chili powder instead for spice, and it turned out very good. For those who thought it tasted too much like sloppy joe, making it this way makes the tomato taste less overwhelming.

Breakfast Casserole

So simple and so delicious! Halfway through mixing it up I realized I only had 2 eggs in the kitchen instead of 3, I was able to make some changes as I went along and it still came out amazingly tasty, this recipe was so easy to work with and to adjust, I can see substituting lots of different ingredients to use up leftovers. I did use the cream as someone suggested since I had some cream on hand, this worked very well. This one is definitely a keeper--thanks!!!

Banana Fritters

WOW these are delicious. Simple..quick..easy...I just fried them in a pan on the stove since I don't have a deep-fryer. Mine came out perfectly light and fluffy, not the least bit doughy inside. Just fry them to a nice golden brown on each side, like you would with any fried food. I can't wait to try these with other fruits and flavors throughout the fall and winter. Thanks for posting this recipe!!!
