Banana Pancakes I

Reviewed: Jan. 19, 2006
I had to rate this! These are great! A good way to use up those two bananas that lay around. For those that thought these were to wet, maybe they over mixed? Also, for fluffy pancakes, ingredients should be room temp. My 2 year old was nuts over these! Thanks so much!

Overnight Cinnamon-Raisin Swirl Bread

Reviewed: Dec. 17, 2005
This bread has an awesome tastes and is very soft textured, like that of bread you get in a store. I had to modify if a bit, I only used 2 1/4 tsps of yeast( 1 packet) and used 1/4 cup brown sugar and 1/4 cup white, also to the dough I add 1/2 tsp of cinnamon and added my raisins. In the morning I rolled this out to make 2 loaves instead of one. I felt this recipe made a lot of dough. I had to bake mine at 400 for about 55 minutes. I will make this again but continue to try to improve it... overall pretty good. I liked using buttermilk. Thanks

Chewiest Brownies

Reviewed: Apr. 6, 2005
After reading the reviews I wanted to give these a try and see if I could come up with a great brownie. I really think the directions are off on the temperature. I set my oven at 350 and had really great results. I used 3/4 cup of cocoa, 1/4 melted butter, 1/4 cup oil and 1 1/4 cup sugar and left everything else the same. I did use an 8x8 pan and baked for 35 mins and they were delicious. I did let these cool before cutting as they are very fudgy and would definetly be a mess if trying to cut them warm. Use the oil and up the temp you will have some great brownies!

Oven Roasted Potatoes

Reviewed: Mar. 29, 2005
My guy is a big fan of roasted potatoes! I agree that the mix of herbs is different but quite good. I did cut back the dill to 1/4 tsp and for anyone who had trouble with these sticking to the pan, make sure you are using olive oil, not extra virgin, the real stuff burns less at high heat. I also baked these at 450. Overall, pretty good! Thanks!

Cabbage Roll Casserole

Reviewed: Sep. 17, 2004
This was great. I took the advice on the reviewer who did this on the stove top. I browned meat with onions and garlic. Added salt and pepper. Then added in chopped cabbage and sauteed for a bit. Added can of beef consomme, tomato sauce, can of petite dice tomatoes, dash of worchestire sauce, TB of brown sugar, TB of lemon juice and 1 tsp of caraway seeds. Dash of basil and oregano. Delish!! Simmer all for about 20 mins on stovetop.

Brown Sugar Meatloaf

Reviewed: Aug. 18, 2004
DELICIOUS! I usually have to cover my meatloaf all over with ketchup because it tastes like boring hamburger, this meatloaf with great! I changed it up a little with onion soup mix and italian bread crumbs instead of crackers and left out the salt. Onion soup mix is salty enough. I also only use 1/3 cup brown sugar and mixed half the sauce in with the meatloaf. The sauce is great I think I will make extra next time! Thanks so much!

Baked Mushroom Rice

This rice is so tasty and easy to put together. My first attempt was a flop, after reading another's review.... definetly use MINUTE rice. Otherwise, your rice will never cook! Thanks for sharing.

David's Yellow Cake

Reviewed: Aug. 2, 2004
This cake had a good taste but found it to be a little dry. Maybe could cut back the flour to 1 1/2 cups or maybe add a little more butter. I will have to tweak this one a little. Thanks for sharing.

Spaghetti Sauce I

Reviewed: Aug. 2, 2004
This sauce is so quick and easy! I almost always have these items in my pantry and it is far better than any jar sauce. I do change it a little bit now and then. I sometimes sautee the onions in olive oil and add cooked cubed chicken for a change. I also use rotini and cut the sugar back to 3 tablespoons. Sometimes use 1 can crushed tomatoes. It is delicious and adaptable to all sorts of tastes! Thanks so much.
