Twisted Apple Cider

Pretty good with 1 cup cider, 1 shot rum, 1 shot cinnamon schnapps. Heat the cider, add the shots, and drink.

Grilled Salmon I

Delicious and easy. I baked the salmon using this marinade on 350 for about 30 minutes and it came out great. I did not refrigerate it, just poured onto the salmon and baked it. I can't wait to try it again.

Chewy Peanut Butter Chocolate Chip Cookies

Yummy and chewy. We added 1 more cup of peanut butter but did not decrease the flour. It had a good peanut butter choco-chip flavor.

Homemade Peanut Butter

2 Tablespoons of oil is not enough. Here is what we did: 2 cups peanuts, 3 Tablespoons oil, and 2 Tablespoons of water. It was still chunky but the kids liked it. Actually, the kids made it!

Pumpkin Pear Strudel

This was delicious and so easy to make. It's a beautiful presentation. I served mine at room temperature and it was demolished by the crowd. Best to use firm pears. You can make it healthier by using Sucanat sugar instead of refined brown sugar. I cooked it on tin foil, sprayed the foil with oil, but it ozzed and was difficult to transfer to a serving plate. Next time I will try a non-stick pan but will spray it. I only had a 10oz puff pastry but it still made two nice sized studels.

Pumpkin Spice Cupcakes

I liked the recipes very much. However, it needs to pack in more nutrition. I altered it with the following: FOR THE FLOUR 1 cup all-purpose flour, 1 cup whole wheat pastry flour, and 1/4 cup flax flour FOR THE SUGAR I used 1 cup Sucanat sugar (not refined) and did add the brown sugar. FOR THE FROSTING It only needs 1 cup of confectioner's sugar not three! Now the cupcake has more fiber, and less refined sugar. Much better for you.

Cranberry Mango Bread

Very delisiouso! I used organic sugar. Instead of using all whole wheat, I substituted about 1/2 cup flax meal. I thawed frozen mangos and pureed in the food processor. A quick way is to food process the mangos, then the cranberries, then the walnuts to get them ready. I did not use 1 tsp. salt - that's way too much. Cut it down to 1/2 tsp. salt. I used Olive Oil instead of Canola. The top comes out crunchy. It's very good. I also doubled it and made muffins. I got two medium loafs, one large, and 12 medium muffins by doubling it. I gave them away as gifts. I brought this to church and everyone loved it. Thanks!

Chocolate Chip Apricot Cookies

A good recipe. I completely changed it though! Used Flax Flour, Whole Wheat and Unbleached Flour. Used Sucanat and cut down on brown sugar. I beat the mixture after I added eggs until it was fluffy. Instead of dried apricots, I used fresh, ripe, chopped apricots.

Tofu Stroganoff

My young family loves this dish, even the 3 year old. I used whole wheat noodles. I used about 1/2 cup sour creme because we did not have cottage cheese. I had basil on hand so I used that instead of dill. It is the soy sauce that gives it the good flavor.
