Refried Bean Enchiladas

Moussaka

This was absolutely excellent. My first time making moussaka, but not my last. I followed the directions exactly except lessening the cinnamon and nutmeg just a tinge. I was afraid of it overpowering all my hard work, but it would be fine to use the amount listed – it’s not much after all. Thanks for the terrific keeper Peggy!

Baked French Toast

I wasn’t sure what to expect with this, but it came out excellent! I followed the recipe exactly except I halved it because we had several other things too (bisquits and gravy from this site, bacon, and fresh tomatoes stuffed with feta cheese, green onion and parsley). I am not sure what people are doing wrong to not have this come out perfectly. The texture was excellent. Thanks for the recipe.

My Best Clam Chowder

I made this for my parents on Mothers Day. I served it with an avocado/bacon salad I found on here along with crusty bread. They loved it. My Mom actually just returned that day from a trip to Florida and she said it was better than the clam chowder they had down there. Such a nice, easy and hearty recipe. All the dicing takes some time, but well worth it. Thanks for the recipe!

Pork Steak Burritos

Wow! I loved these. I sometimes forget that a good recipe doesn't have to have tons of ingredients and steps. I did add some chopped jalapeno just because I like spicy. Thanks for the recipe.

Asian Tuna Patties

These are very good. I love tuna, but was getting sick of eating plain out of the can. I won’t use mayonnaise so this recipe made perfect sense. I didn’t have cornmeal but they still came out great. I am eating leftover for lunch right now with a little Chinese hot mustard. Thanks for the recipe, it’s a keeper.

Perfect Baked Potato

I have to disagree. There is no way a nuked spud can come out like this, not even close. This recipe is so obvious when you think about it yet I had been baking mine in foil all this time. Thanks so much. I am making some tonight to go with my MarketDay roast beef.

Shrimp and Crab Enchiladas

Really liked this recipe. Was great the next day for lunch at work too. I did add a little fat free cream cheese to the tortillas to try and make it creamier. I didnt use shrimp, just crab. Basically everything but the cheese was fat free or very low (1.5g or less). I couldnt find low or free monterey jack and wanted to stay with that. This is a great "base" recipe that will be fun to play with in the future, even with veggies as the filling.
