26-year-old ichthyophobic mother of one and step-mother of one more with aspirations of winning the lottery, retiring young and travelling the world. If I could describe myself in four words I would say: devoted, honest, talkative & intelligent. I like to cook, although I would say that the experience is a lot more enjoyable if you don't have a baby pulling on your leg and crying! I don't always get a lot of time in the kitchen anymore. So for me lately, the quicker the better and I definitely get a lot of use out of my crock pot!
My favorite things to cook
I make a lot of Bahamian food such as steams, corn n' rice and potato salad. I also enjoy making pasta salads, soups, BBQ meats and anything that I can throw into a crock pot.
My favorite family cooking traditions
My family always makes a big pot of chicken souse on Christmas eve and serves it on Christmas morning (so that the flavor seeps overnight) along with johnny cake for breakfast. Yumm! We also have a family Christmas lunch where we serve ham, turkey, peas n' rice, baked macaroni, potato salad, cole slaw and whatever else we can throw together. There's always way too much food! We eat whatever is left for dinner that night....
My cooking triumphs
I had a lot of success with making a carrot cake from this site - got lots of compliments on it. I also have been told that I make a mean corn n' rice and potato salad.
My cooking tragedies
I made this fabulous sounding banana bread from a recipe that I found on this site, it smelled great while baking and turned a nice golden brown colour when done. Five minutes after removing it from the oven the middle of the top of the bread "caved" in - when I cut it, the entire middle of the bread inside was still uncooked! It was such a shame! I'm still upset about this disaster! I must say that the cooked edges of the bread were quite tasty though.
