Chocolate Mint Candies Cookies

So good, but be warned- a lot more work than normal cookies. That being said, the chocolate, cake-like cookies were the perfect complement to the melted andes candies. A favorite with my family this Christmas.

Greek Pasta Salad I

I made this salad tonight with a few changes. I used only half the oil and vinegaer, and I used half red wine vinegar and half balsamic. I reduced the spices by 1/2 tsp. I added zuchini and just used a small regular tomato chopped up. I also omitted the mushrooms and used greek kalamata olives. Obviously I made lots of changes, but it was really the sauce of this recipe that makes it so delicious.

Simple Whole Wheat Bread

Very good recipe. This may seem silly, but my favorite part of making this bread was after you mix the honey, water, flour, and yeast and you let it rise until bubbly. Then you add the butter and salt, and it falls right through the dough! I have never made bread, but for some reason this part was neat to watch. I made mini-loafs and reduce the time by 5 minutes and it ended up perfect.

Mom's Zucchini Bread

Heaven in a loaf of bread. I used zuchini out of my garden, and the squash was sweet enough I probably could have reduced the sugar, but this bread was soooo good!

Amish White Bread

Easy to make a delicious. Today was the first day I have EVER made homemade bread, and it took about 4 hours (I made 3 different recipes). I made mini-loafs, and should have reduced cooking time by probably about 5 or 10 minutes.

Broccoli Soup

This soup was fairly good, although I did make some changes. I used 2 potatoes, fresh broccoli, and added a splash of red wine vinegar. In the end, this soup seemed to be missing something, but I couldn't quite put my finger on it. I think something like ham or bacon would add some salty richness and really make this soup amazing. That being said, considering this soup has almost no calories compared to most main meals, it was very good. It was creamy and thick, and left me full. However, my husband, who hates broccoli, hated this soup. More for me!

Basic Truffles

I am no expert at making candy, in fact this was the first time I ever attempted it. It was so easy to make these, and it took me about 4 hours to make 200. I made 6 different varieties, and they were all great. I made the regular recipe, coconut with coconut extract instead of vanilla and rolled in toasted coconut, mint made with mint extract and rolled in crushed peppermint candies, almond made with vanilla extract but with toasted almonds in the chocolate and rolled in raw crushed almonds, raspberry vanilla (this variety required 1 tsp vanilla and almost 2 tsp raspberry extract), and mocha, which I made by blending some flavored coffee powder into the chocolate mixture and rolling in a blend of the coffee and cocoa powder. A few hints: save yourself some grief and buy a chopper (I used mine for the chocolate, candies, and nuts). Have the chocolate, cream, and extract ready before you begin melting the chocolate. It is easiest to roll and cover the chocolate if you wait until the chocolate has set firm. Then scoop the chocolate, warm it in your hands, and roll into ball. Also, I was very concerned it would be difficult to get the toppings to stick- it was actually very easy for them to stick. I hope this review helps. It was actually kind of relaxing to make these.

Cranberry Sauce

This cranberry sauce bothered some of my family (they wanted the same old jelly). However, I thought it was probably the best cranberry sauce I have ever had. It is also better for you (lower calorie) than traditional canned sauce. I boiled my cranberries for closer to 20 minutes and then mashed them with my potato masher. They were the perfect thick consistency.

Turkey Brine

So, so, so good! The white meat on this turkey may have been more moist than the dark meat. I don't like white meat, but that is all I ate off this turkey. I put my turkey in the brine on Tues morning, and it was not thawed until Thurs morning. Just make sure if you have a big bird, and a fridge that things are slow to thaw in, that you give your turkey several days to thaw. I cooked my turkey uncovered on 325 for about 4 hours.

Slow Cooker Stuffing

This was very good. I actually adjusted it to make it lower calorie. Instead of butter i used 2 tbsp garlic canola oil and about 1 cup vegetable broth. I did not use fresh parsley or mushrooms, but I did use dried parsley. I used a combo of country white bread, sourdough, and multi grain. I actually used closer to 15 cups of bread crumbs, which fit in my slow cooker fine. I probably did use close to the 4 cups of broth. I just added enough to moisten the bread, and checked and added more about every hour. I cooked on low for about 4 hours. It would have been very good with something sweet- apples or cranberries. It was really good anyways. Great and easy recipe!

Four Cheese Sauce

This was very good. We made it and poured it over 2 boxes of pasta. It got a little thick for leftovers, so we added some milk and extra mozzarella and it turned out fine. We also did not use the exact cheese the rescipe calls for. We used a mix of provolone, mozzarella, and parmesan.

Minister's Delight

I used two cans of pie filling, and a whole box of cake mix- which I thought was good amount of topping. This was a very sweet dish, but it was delicious. I was worried it may be a mess to clean up, but it actually cleaned up nicely from the crockpot. I used apple, and it was very good.
