Easy Fruit Cobbler

This was an easy and delicious recipe. I used 2 cans sliced peaches (drained) and fresh blueberries. I sprinkled the fruit with cinnamon and a little brown sugar before adding to the batter. Also, I followed other's advice and added 1 tsp. vanilla into the batter also. It tastes great warm with vanilla ice cream...YUM!

Apple Chicken Quesadillas

I thought these were awesome, exactly as written. The apples really helped to create a unique flavor and they came out nice and brown and crispy. My husband loved them. We will definitely be adding this to our recipe collection:) Thanks

Tomato Chicken Parmesan

This recipe was absolutely delish!!!! I scale down some of the ingredients, as recommended by other reviewers. Thus, I only used one egg, 1/2 cup Romano cheese, (purchased from a local Italian food store..it's the best), and 1/2 the amount of seasoned bread crumbs. It was plenty with some even left over. I used olive oil vs. veggie oil and used 16 oz. of my homemade Italian sauce. I used provolone cheese slices because that's what I had at home. I followed the cooking instructions as is and it came out so tender with an excellent flavor. My hubby was impressed. It really seems to melt in your mouth:)

Pear Honey Cranberry Sauce

I made this recipe for Thanksgiving and was greatly pleased with the results. The combination of flavors is excellent! I did however allow the cranberries to cook 15-20 minutes vs 5 mins (as suggested by others) to really allow the sauce to thicken and bring out the rich color. Everyone enjoyed this recipe on Thanksgiving so I am now making it again for Christmas dinner. Thanks so much for sharing:)

Spinach Pasta Salad

I made this salad for our father's day picnic (with only 7 people) and it was nearly all gone!!!! We couldn't stop eating it. I made my dressing from an Italian dressing package (using extra virgin olive oil/vinegar vs. bottled dressing) and I also added mushrooms. The combo of flavors in this dish is excellent!!!!!! I will save this as a favorite. Thank you:)

Seasoned Turkey Burgers

I made these for a father's day picnic and they were a HUGE hit!! They were so flavorful and moist. The key to cooking them is over LOW heat on the grill (as other reviewers have mentioned). I will never make my turkey burgers with bread crumbs again!! Thanks for the great recipe.

Banana Split Cake II

This is a delicious and easy summer recipe. I used reduced-fat Nilla wafers, fat-free cream cheese, Light Margarine, and fat-free cool whip and it still tasted great! Everyone at our family picnic was complimenting me and having a second helping, even my father-in-law who despises anything low-fat! Next time I'll use light cool whip vs. fat-free as the fat-free is slightly watery. Terrific and fun recipe~Thanks:)

Broccoli Chicken Casserole I

This was a great dish, even one that my 12 month old enjoyed too! However, I never usually boil my chicken so I wasn't sure how long to do so and I think I cooked it a little too long and so the chicken was just slightly overdone. Other than my own mishap, the combination of flavors was excellent and we had a dinner the whole family enjoyed! I'll definitely make again!

Pita Chips

I've been making these quite often after I found the recipe. I've served them with white bean dip in the past and today we had them for lunch with tuna salad. I usually only a 1/4 c. olive oil to save on calories. My husband and I love them. Thanks for the great recipe:)

White Bean Dip

I made this one evening when we had friends over. I used fresh parsley instead of cilantro and used slightly less olive oil to save on calories. We served it with freshly baked pita chips. I thought the amount would be too much for only 4 people but it was ALL gone by the end of the night. Everyone loved it!

Mediterranean Lemon Chicken

The combination of flavors in this recipe is excellent creating a great tasting dish. The only reason I did not give it 5 stars was because it did not make enough sauce for continued basting(even with using 1 and 1/2 lemons and ~2 T. olive oil). I will definitely make again however I will likely save some sauce on the side to add for basting. Overall it was a very tasty and unique dish.

Oreo® Cookie Cake

I made this cake for my husbands birthday and it was a big hit! Everyone really loved it. I followed some of the suggestions of others and reduced the cream cheese to 1 1/2 boxes and substituted with chocolate pudding. I used all light/fat-free products and it still tasted excellent!! Thanks Pam

Best Green Bean Casserole
