Honey Peanut Granola
This is simple, straightforward recipe that was a success. The only thing is to watch the baking time. The recipe says one hour but mine started to burn at 40 minutes. I was able to pull it out just in time but it was still on the too dark side. I wanted to give it away as a gift but I'll eat this batch and make another. I used ground flax seed in place of wheat germ, and cashews and raw almonds.

Buffalo Chicken Mac and Cheese
I omitted the noodles and bread crumbs and used a few cups of broccoli and asparagus instead, with thin sliced chicken breasts I already had grilled with garlic salt. I definitely needed to adjust the sauce measurements down. Without noodles and bread crumbs it's better to half everything for the sauce recipe and omit the milk. It's really delicious and I couldn't stop eating it straight out of the oven! I'll play around with the recipe again, but this was a good start for me for using up some cooked chicken.

Zucchini Bread
I'm enjoying a warm piece of this delicious bread now! I used this recipe as a starting point, and made some adjustments, 1/2 cup oil, 1 cup sugar, 1 cup sour cream, 1/2 teaspoon lemon extract. Left out cinnamon and chocolate chips. It turned out really moist and flavorful! Lemon and zucchini are a great compliment to each other, who knew?
