Savory Venison Meatloaf

This will go in my favorites file! I didn't use the bacon as that counters some of the major health benefits of eating venison and it was still very moist and flavorful without the noticeable difference in texture that we often find with ground venison. I would have never guessed that it was anything other than beef and it was more tender and moist than my usual beef meatloaf recipe! I used a spicy steak seasoning and a spicy BBQ sauce. It was delicious but I will experiment with a homemade or purchased BBQ sauce that is lower in sodium.

Quick Spaghetti Sauce

The amount of Italian seasoning seemed to overpower the sauce. I will make again but will add my own blend of seasonings and use more garlic.

Veggie Chicken Skillet

Lacked depth of flavor. Liked how quick and easy it was to prepare. May try again and add some white wine or some lime juice. It needs something more to complete the taste.

Bavarian Chops

This looked and smelled like a flavorful dish but it was very bland. I think wine or apple cider would add more flavor than what the beer did for it. Maybe it needed to be a stout beer.

Sweet Potato Gnocchi

I made this with pureed butternut squash because I had it left over and finely ground white spring wheat flour. I put the dough into a plastic kitchen storage bag, twisting the top to extrude through the cut off corner. I used a sharp kitchen scissors (love my Joyce Chens) to cut right into the boiling water. That was easy and mess free. These were very good and light in texture, but will make again with sweet potatoes to compare the flavors.

Grilled Mustard Potato Salad

I decreased the oil to 1/8 cup and added a tsp of horseradish and used about 1/4 tsp garlic salt and 1/4 tsp celery salt. My husband thought it was fantastic. I used a grilling basket to let more of the smoky taste come through. If you like it tangy, you will love this.

Simple Whole Wheat Bread

I LOVE this recipe and have been making it regularly for over a year. I use all whole wheat flour that I grind myself and when I use a white winter wheat, it is still very light and moist. I often cut the honey in half for a less sweet bread. I have also used oil instead of butter but do prefer the taste of the butter and rationalize that it isn't much saturated fat per serving.

Crumb-Topped Rhubarb

I have several rhubarb recipes that are similar but I like the cinnamon addition in this one! It has great flavor. I might cut down some on the white sugar next time to give it a little more tang. It, or my rhubarb, was pretty mild and I like some tang to it along with the sweetness. I am actually trying to get away from sugar but I had to have some springtime rhubarb!

Old-Fashioned Vanilla Pudding

I made this for dessert tonight on a cold, rainy March day and it was perfect comfort food served warm. I used skim milk and it was still yummy and creamy! What a wonderful old fashioned treat! I would take this over cheesecake any day!

Slow Cooker Tender and Yummy Round Steak

This was good comfort food but fell a little flat. I added some Worcestershire and my son was still looking for something to give it more flavor. Next time, I might try adding some wine and/or some more herbs. It seemed much like stew and I like to add a bay leaf or two to stew so maybe I was missing that. The meat was very tender and I like to use red potatoes as they don't get mushy in the crock pot. I never think baby carrots give as much flavor as whole carrots that have been cut. Overall good, but not a knock out dish and that is what I collect for my keeper recipes.

Pumpkin-Pecan Cake Roll

I have made this recipe several times and it is a hit. Maybe adding the lemon juice last is the secret, but I have always mixed the beaten eggs, sugar, pumpkin and lemon juice first and then added the rest of the mixed dry ingredients and gently folded them into the batter. Otherwise the texture of the cake is fairly tough if they are just mixed in. If you like carrot cake or zucchini cake with cream cheese frosting, you will love this and it is attractive to serve.

Grandma Ople's Apple Pie

We love this pie. Must use granny smith or another tart apple to get good results. Quite by accident, I had to leave the house before it was finished baking, so I turned off the oven and came back to it 2 to 3 hours later and it was wonderful! Apples were done, crust was crisp but not burned. Recommend baking at 425 for 15 minutes, then 15-20 minutes at 350 and then turn off oven and let it coast for a couple hours. It will be warm with a nice golden crust. Yum!
