Ten Minute Enchilada Sauce

This was an excellent sauce, we used it as a replacement in another recipe and it was amazing. I had a deep, rich enchilada sauce that balanced nicely with the Monterey jack cheese we chose.

Fluffy Whole Wheat Biscuits

These were perfect. I added some corn meal for texture and used only whole wheat flour, and used heart-shaped bowls as cutters to make them. They were so tasty!

Hudson's Baked Tilapia with Dill Sauce

Very quick prep. Made the creole seasoning myself so that actually took longer than anything else. I laced my baking dish with olive oil and my tilapia came out tender/flaky as can be in just 15 minutes. Sauce was simple and refreshing, it yields a bit much, so I'm using the leftover sauce in my mashed potatoes.

Cowboy Mashed Potatoes

Added diced ham and a bit of cream cheese for flavor and texture. Tough to find Yukon Gold Potatoes and cheddar cheese here in Germany so, just used "Speisekartoffeln" and "butterkaese" as substitutes. Very very tasty.

Grandmother's Buttermilk Cornbread

So moist and delicious. I also substituted the flour for whole wheat flour and it cuts the sweetness and adds a nutty flavor to the bread. Very delicious, and great with jam.

Thai Pumpkin Soup

Our family loved this soup. We didn't have lemongrass, though, in our local supermarket so we just squeezed a tablespoon plus a little more of a fresh lemon into the garlic/shallot mix. Wonderful with some fresh ground pepper, a tiny pinch of salt, and the basil garnish.

Butter Mochi Cake

This cake (heated up) with vanilla ice-cream is delicious. I recommend having it with something like ice cream or sorbet to balance the sweet/buttery taste of the cake.

Reshmi Kebab (Silken Kebabs)

I wanted to add to the instructions, to de-seed the peppers (I used jalapeño and Serrano)using gloves. My fingers are still burning 24 hours after making the marinade. This was my first foray into kebabs and it was quite easy to make and very tasty, but the peppers left me in lots of pain...lesson learned!

Spinach Quiche

I used less butter than the recipe calls for, skipped the mushrooms, used shallots instead of an onion. Then, I added some ham chunks and used various cheeses: cheddar, Gouda, etc. It made enough for a 9" pie pan (with crust - I used "Cheesy Quiche Crust" recipe) plus 2 small ramekins. Very very tasty! The consistency was really nice too... Oh, and really drain the frozen spinach to help reduce the liquids!
