Stuffed Green Peppers II

Everyone loves this dish! I boiled the peppers for five minutes to soften. Used one pound beef and 1/2 pound garlic sausage. One 28oz can crushed tomatoes in place of whats called for and I added a diced red pepper to the onion saute. I also added a healthy tablespoon of herb de provonce and a little oregano. The last ten minutes I topped the peppers with motz cheese.

Sausage Shepherds Pie

This was a great winter meal. Everyone loved it. I cut the sausage by half and added ground beef. I also added one small diced onion sweated in olive oil before the meat in the pan. I also made my own garlic mashed potatoes for the top.

Chipotle Blue Cheese Dip

I wasn't sure how this would come out. If I hadn't read the reviews I probabily would not have made this but I am glad I did! This was most excellent! Even people who don't much care for spicy things liked this dip. It's a "good hot"

Cheeseburger Soup III

This was a great starting point for a good CB soup. I omitted the potatoes. Ran the veggies through a food processor after they cooked down. Added more milk and some heavy cream. Used half American cheese and half Velveeta. To make it taste more like a liquid cheese burger I added some Montreal Steak seasoning, a little ketchup, and a little yellow mustard. I diced up a few roma tomatoes and a head of lettuce that I tossed in last. Fantastic!

Simple Garlic and Basil Pesto

This was soooo GOOD! I had been using jar sauce and always had less than satisfying results. I made this pesto and added it to some ricotta cheese, mozzarella, parm, salt and pepper and used it in home made ravioli. WOW, awesome! Thanks.

Breakfast Upside Down Cake

This was a huge hit in our house. I used a package of frozen hash browns that was browned with the onion and peppers. I doubled the bacon and used seven eggs. Thanks for this great breakfast pie!

Cheesy Macaroni and Beef Casserole with Thyme

This was a good cold weather/kid frendly casserole. I added a diced green pepper to the onion and used half velveta and half sharp chedder. Next time I will use corn starch as a thickner as I still tasted the texture of the flour even after I cooked it out. I sprinkled the top with some parmesan cheese and paprika for color.

Marinated Ranch Broiled Chicken

WOW, thanks for this recipe! I made this as written but decided to cut the chicken into chunks and grill them as shish kabobs. I cut up an onion and a red and green pepper, tossed them with a little olive oil and McCormick’s chicken seasoning. Made kabobs by alternating veggies and chicken and grilled them up. Served them up with Uncle Bens wild rice for a dinner everyone loved! I will be making this a lot! Thanks!

Spaghetti Torte

This was excellent! Nice presentation too. I also used three whole eggs and instead of fresh basil I mixed in some basil pesto with the ricotta and parm. I also made a meat sauce that was mixed into the pesto/pasta mixture. I layered some provolone cheese half way up and topped with motz and sliced tomatoes. I will make this again! Everyone loved it!

Quick Cheeseburger Pie

I decided to make cheeseburger calzones with this. They where a huge hit! Next time I will only use the pickle juice. Using both the juice and diced pickles is a bit too much pickle flavor. I also used shredded chedder instead of swiss and melted in three slices of velveta into the meat mixture. Just make your favorite pizza dough, fill small rounds and fold over to make the calzones. Bake @ 425 till lightly browned. Excellent.... thanks.

Grilled Chicken Burgers

A very excellent Chicken sandwich! I read that people has issues with the mixture being too loose and the need to add more bread crumbs. I decided to leave out the tomato as I felt it would add to much moisture. The half cup bread crumbs is perfect. I added a slice of tomato on top of the patty after cooking. Very Very good!

Italian Chips

I played with this recipe a bit to make it a bit better. I didn’t like the slight flavor of corn starch left on the wrappers. I dipped them in a bowl of cold water and pat dry on paper towels before baking. I also thought they needed just a touch of salt even though the Parmesan cheese is salty. I sprayed the cookie sheet with cooking spray and sprinkled some popcorn salt on the oil before setting down the washed wanton wrappers. I baked them at 400 degrees for 8 minutes and served with warm marina sauce. Thanks for this recipe!

Quick Chicken with Asparagus and Provolone

Excellent dish! I used panko bread crumbs seasoned with parmesan cheese and McCormick chicken seasoning. Next time I will season the chicken directly with the chicken seasoning before breading. I too used fresh asparagus. Browned the chicken a few minutes each side, topped with fresh asparagus and about half a can chicken broth and cover to let the steam cook the veggies about five minutes. I removed the chicken from the pan to a platter, topped with provolone cheese and shaved asiago and placed in a convection oven at 170 degrees till cheese is melted and browning. I served mine over uncle bens wild rice. Not only did it look excellent on the plate it was outstanding!! Thanks for an excellent recipe!

Double Tomato Bruschetta

A very easy and excellent dish! This was the best Bruschetta I have had. Another review was correct in that the sun dried tomatoes are the key here. I don't like them in many dishes but here they are the key. Thanks!

Peppered Bacon and Tomato Linguine

OUTSTANDUNG! After the bacon was rendered out I cooked some diced chicken in the bacon fat and removed. Sweated a small diced onion for a couple of minutes till soft then deglazed the pan and all the brown bacon goodies with chicken broth. Added remaining items along with the chicken and pasta. Tossed with fresh basil and cheese. It was a big hit! Thanks.

Maria's Pepper Steak

YUM! I used flank steak and cut the red wine vinegar a bit and added more soy sauce. I thickened the sauce with corn starch and served over white rice. Excellent flavor. Thanks.....
