All-Around Good Smoothie

Reviewed: Apr. 5, 2006
I HATE smoothies--but I loved this one! One thing to remember though-- freeze the banana after you peel it! I forgot the strawberries, and used blueberry yogurt instead of regular, both of which worked out fine for me. I also used the vanilla flavored protein powder, which gave the smootie a nice flavor. Thanks for the recipe!

Easy Microwave Chocolate Cake

Reviewed: Jun. 18, 2007
Really very good, and so easy! I would give 5 stars, but I had to use slightly different ingredients. I used 3/4C sugar as another reviewer suggested, used canned coconut milk instead of regular milk, and dry chocolate malt mix instead of cocoa (coconut milk and malt mix were all I had). I mixed it all up, and put it in the fridge. Every day I am going to microwave about 1/3 of a cup to have dessert for one - about 5 days worth. I just finished one little cake, and it is not lacking at all for sweetness!

Baked Hawaiian Sandwiches

Reviewed: Oct. 31, 2012
Wow....I could drink this sauce. I made it in the microwave. I didn't have honey mustard, so I just added some honey and some mustard to the rest of the ingredients..

Bob's Mexican Stuffed Chicken

Reviewed: Apr. 10, 2006
My boyfriend's favorite meal that I have ever cooked! ~and I've cooked a lot for him :) I didn't have any toothpicks, so I just layered the toppings on the chicken, and it came out wonderful. I hate chicken, and it was so moist, that even I ate it.

So good - I threaded the skewers with green and red peppers and red onion slices. I used extra honey also :)

Sweet Grilled Corn

Reviewed: Oct. 6, 2007
This was fantastic. It's pretty simple and I didn't soak the corn first. Still came out great and smelled really good too. I used regular vegetable oil and Italian seasonings.

Peanut Butter Cookies II

Reviewed: Apr. 23, 2007
This cookie batter is so good that I only made one batch of actual cookies and ate the dough for the rest of the week! Since I like my cookies soft, I took the advice of other posters and used half brown sugar and half maple syrup. I also added some baking powder and milk and increased the pb. Then I baked for 12 mins at 350. The only thing I will change for next time will be to add more coconut. Fantastic!

Banana Crumb Muffins

Reviewed: Feb. 6, 2009
These were so good! I forgot to add the butter to the first batch of muffins, but they were just as good as the second batch, so I'm leaving it out from now on to make them healthier. Thanks for the recipe :)

Love this! So easy. I made as written but used water instead of wine because I didn't have any on hand. Delicious

So yummy! Scaled it to 4 servings and left out the chives. Topped with a blue cheese/mayo mixture and red wine caramelized onions

Peanut Choc-Scotch Fudge

Reviewed: Jan. 10, 2011
I have made this twice now, and the first time I made it the flavor was good, but the consistency was really crumbly. The second time I made it the fudge was so hard I couldn't even cut into it. Both times I waited until the sugar formed a ball when dropped into hot water. I think a thermometer is needed for accuracy.

Zucchini Boats on the Grill

Reviewed: Oct. 6, 2007
I wasn't thinking and directed dh to cut the zuc before boiling. Oops, the zuc came out squishy, but no one minded! It was still fantastic, but I will have to boil first next time to be sure of texture. I didn't use olives or jalap's due to families tastes. I added an extra Tb of green chile's and they definitely added a nice kick.

Five Food Groups Macaroni Salad

Reviewed: May 24, 2007
I reviewed this back in 2007, and have been making it since then. I made it again today, and the changes I made were to substitute Ken's Sweet Vidalia Onion dressing for the creamy salad dressing + ranch combo. It is definitely a sweeter pasta salad, but still delicious. I am eating it right now straight out of the bowl, without waiting for it to go in the fridge...

Fired Up Southwest Fajitas

These were a big hit! Next time I will use less oil though. I served these with brown rice and low fat sour cream on whole wheat tortillas :)

Bacon and Tomato Cups

Reviewed: Dec. 27, 2005
This is the most fantastic apperizer ever created. I cut up a shallot instead of the onion (I was feeling lazy, and the shallot was small). I used the dough that was called for in the recipe, and it worked wonderfully. Maybe my mini-muffin tins are a bit bigger! My only complaint is that there weren't enough to go around. I will definitely double or triple the recipe next time!

Everyone I made this for loved it. I thought it needed a little more flavor. I will make this again, but next time make more of the ricotta cheese mixture.

Mid-Summer Italian Bread Salad

Reviewed: Apr. 2, 2013
My favorite salad ever. I use about 4x the amount of olive oil and balsamic vinegar, and no thyme. I have also made this with all of the chopped up fruits/vegetables straight out of the freezer, and let them sit in the salad to thaw overnight.

French Shrimp Salad

Reviewed: Aug. 11, 2012
This was soooo good. I made it to use as sides for my lunches last week, but instead I ate it all at one time. Make sure you let it sit in the fridge for a bit before you eat it though - tastes so much better!
