Mid-Summer Italian Bread Salad

My favorite salad ever. I use about 4x the amount of olive oil and balsamic vinegar, and no thyme. I have also made this with all of the chopped up fruits/vegetables straight out of the freezer, and let them sit in the salad to thaw overnight.

Creamy Grilled Shrimp Tacos

I wasn't sure how I would feel about this recipe...cream cheesy shrimp tacos? Glad I tried it because it was fantastic! I served it on a tortilla with refried beans.

Grilled Shrimp and Apple Skewers

These are DELICIOUS! I am eating the last shrimp now, and I am so sad I may just have to go back and make some more for myself. I didn't have any basil, and subbed cider vinegar and pumpkin jam. Also made in a skillet on the stovetop instead of grilling.

Corn and Zucchini Melody

This recipe turned out fantastic. I used frozen zucchini and onions, and canned corn, because that was all I had. Let me tell you that I HATE canned corn. In this recipe? It is soooo good. I added some lemon pepper and dill, and didn't use any bacon grease. Also I had frozen shredded parmesan cheese that I used instead of MJ. So easy and delicious.

Wow....I could drink this sauce. I made it in the microwave. I didn't have honey mustard, so I just added some honey and some mustard to the rest of the ingredients..

French Shrimp Salad

This was soooo good. I made it to use as sides for my lunches last week, but instead I ate it all at one time. Make sure you let it sit in the fridge for a bit before you eat it though - tastes so much better!

Buffalo Chicken Dip

This is so, so, so fantastic. I brought it to a party and it was gone instantly! Followed the recipe, except didn't use a slow cooker and didn't add the second half of cheese. Good cold or hot - people couldn't get enough!!! Served with wheat thins.

Peanut Choc-Scotch Fudge

I have made this twice now, and the first time I made it the flavor was good, but the consistency was really crumbly. The second time I made it the fudge was so hard I couldn't even cut into it. Both times I waited until the sugar formed a ball when dropped into hot water. I think a thermometer is needed for accuracy.

Cheddar Baked Chicken

I hate chicken, but I had to eat a piece of this one! It was so good. I originally made this for the bf, but it looked delicious, so I tried it and loved it. I didn't drizzle butter on top, but next time I am going to leave out the butter on the bottom and only put the butter on top. Yummy!

Tom Ka Gai (Coconut Chicken Soup)

Fantastic! Didn't use chicken or tumeric and added mushrooms and splenda. So fast and good... UPDATE: oh yeah, forgot the green onions, but didn't miss them and in place of ginger I used a ginger blend that I found in the produce section - pretty sure it's a mixture of fresh chopped ginger and sugar.

Scrambled Egg Muffins

Really good! Added 1/4c mayo and 1/4c water to eggs and sauteed the onions first. Greased the muffin tins with a tiny bit of margarine and they popped right out. Easy to make and very cute. May try to incorporate potatoes/hash browns in the future.

Kim's Macaroni Salad

I tried this right after I made it (before chilling), and I really didn't care for it!! I was so disappointed, but I just had some now - 4 hours later - and I love it! 5 stars. I changed some things based on what I have on hand - red wine vinegar and chilies instead of jalapenos, and brown sugar instead of white. I might eat the rest of the macaroni before everyone else gets to it...

Banana Crumb Muffins

These were so good! I forgot to add the butter to the first batch of muffins, but they were just as good as the second batch, so I'm leaving it out from now on to make them healthier. Thanks for the recipe :)

Garlic Bread Fantastique

There was way too much Oregano in this recipe for me - it turned the bread green, which was actually kind of funny :) Also, it doesn't need the salt at all. I am going to try it again with less oregano and more salt, and I'm sure it will be perfect.

Spaghetti Sauce Mix

This actually gets 3.5 stars (3 from DH and 4 from me). It was really easy and quick, but I just didn't like the sauce very much. I used crushed red pepper as that was all that I had - I think it would be better with the sweet like the recipe calles for.
