Blueberry Pie

This is just like a recipe that I make all the time. I use 1/4 cup flour, leave out the cinnamon and add a couple of good squeezes of lemon. Mix the flour, sugar lemon and salt right into the blueberries. Bake the pie at 425 degrees for about 20 minutes and then another 30 minutes at 350 degrees. The filling won't be solid until it's cool. It's a delicious pie!

Bill Clinton's Lemon Chess Pie

LOVE this pie. I used 1/2 cup of juice and 1 1/4 cup sugar. I think maybe it's regional to want it as sweet as this recipe is. So you might like it as sweet as it's written. I like it a little more tart.

Coconut Macaroons

Absolutely delicious! Very easy to make. Look beautiful and are wonderfully moist and coconut -ty. I lined my cookie sheet with parchment. It worked great. The macaroons slid right off.

Plum Blueberry Upside Down Cake

I doubled the brown sugar and used all pitted, halved, Italian Prune Plums and put them skin side down against the bottom of the pan. I also followed the suggestion of adding 1/4 teas. of cinnamon. Cardamom would also have been good. I used an 8" springform pan which made the cooking time a little longer. The cake took at least an hour to bake. To get the bottom of the pan off the cake I slid a piece of dental floss between the pan bottom and the cake after it was inverted onto a plate. This is a delicious cake and would work great, I think, with cherries and almond flavoring or any other fruit which appeals to you.

Chorizo and Broccoli Rabe Pasta

I changed this a lot because I wanted to make it for a side dish but I'm giving it a five as it is because the recipe is so versatile and a great way to use broccoli rabe. You could easily substitute broccoli, broccolini, chopped spinach or kale, or another vegetable for an equally good dish. I left out the chorizo and onion and substituted ziti for rotini, steamed the broccoli rabe, and mixed it all together with a squeeze of lemon, a little lemon zest and a couple of extra tablespoons of olive oil. It was an excellent side dish. It stretched the broccoli rabe and the pasta cut the bitterness of the rabe a little. It's an excellent combo.
