Coconut Poke Cake

Living in Singapore, we like to do a good tropical BBQ every now & then...this cake was PERFECT for our last grill-up! Easy to do, and not too much time in the kitchen, which is great, since it is usually 90 degrees f. year-round here!

Orange Cream Cake I

I was worried about the "too sweet" comments, so did the following... - Couldn't get orange cake mix, so used lemon, plus 1 T. orange extract, and 1 t. grated orange rind. - Instead of using Cool Whip, (which is sweetened), I just whipped my own cream, (no-added sugar or flavoring), then folded together with the pudding/Jello mix. My husband thought it was great, and he hates things that are "too sweet"!

Blackberry Yummies

Did I do something wrong? I thought that this would be a bar-type recipe, as I found it in "cookies", but, no, it is more cake-like, and a dense cake at that. Very good, though, especially when I added cream cheese frosting. It is a cake, though, right?

Vel's Christmas Shortbread

Maybe I had trouble rolling because I live in the just kept crumbling up on me. Not to worry, tho, I just pressed into 2 X 9" cake rounds, sprinkled with coloured sugar, baked for 40 min. WOW! The cast of my kids' Musical Show went nuts and devoured in less than 5 min.! Thanks, Vel & daughter!

Hot and Sour Soup with Tofu

As my husband is Chinese, I would like to offer the following "tip" to make this more "authentic": After the last step, but just prior to serving, whip up 1 raw egg with a fork and slowly add to the boiling soup, stirring constantly. You will notice the difference immediately!
